I can see that there are several cutting edges on each tool, and that you can deburr with each of them. But I don't understand if there is a difference between them? Should I use one edge for one application and another edge for another application? If not, then why are there several?

This way when the edges get dull you will be able to use the different edges instead of changing the blade right away which is worn only on a small portion of it's length.

or you can sratch your parts with that other edge... u dont seem to deburr much

Usually it's the ball at the end of the blade that scratches the workpiece if you hold the blade improperly. Everything I do passes the finger blood test when I'm done so I'm pretty confident on my deburring skills whether I'm deburring a gnarly angle grinder cut on sheet metal or lapping a cutting tool edge clean.
