There's actually a huge comunity of vegans and even raw vegans among Czech people. I didn't agree with lots of things said in this documentary. It was interesting to watch my own country by the eyes of someone else, but I didn't find it that authentic. Even the music sounded like Russian Jewish music. I've never heard music like that in my country. Then again, although I've been to Prague countless of times, I'm from Moravia. So maybe there should be a documentary about Moravia too. Especially about wines and spirits. Bohemians can't make good Slivovice. That's preposterous. Interesting to watch nonetheless.

It's true, that Bohemians and Moravians have some kind of rivalry between each other, but I don't feel being a part of that. For example, I wouldn't ever say that Brno is more beautiful than Prague. Prague is one of the most magnificant places I've ever been to (when it comes to sight seeing and culture). But the people there are cold and basically just try to get as much money from you as they can (there are tons of documents about this - one even made by BBC). Now, in Brno, people are grumpy and swear a lot, but they are actually more honest and it's usually their pleasure to help a stranger lost in their streets (unlike people from Prague). Of course you can't apply this on all the people living in Prague or Brno, but from years of my own experience, this is how the majority of people behave. So if you want to see some great sights, visit Prague or Český Krumlov. If you want to taste great spirits from all kinds of fruits, be sure to visit South Moravia, particularly small villages. That's just how it is.

+Judah Licharowicz Thanks! That's actually very admirable. Not many people can admit mistakes! I really respect that. Indeed! I think nowadays lots of major cities go through noticeable changes when it comes to gastronomy. It's finally popular to eat healthy local foods, so many people try to connect the traditional cuisine (by using local ingredients) with modern approach (using high quality and, if possible, healthy ingredients). Prague certainly is no exception. I think people in Brno try too, but as Brno is significantly smaller, the changes are much slower and less noticeable. When I look back - 5-10 years ago, you'd randomly walk around the center of Brno or Prague and you'd find lots of taverns with cheap shitty food. Now with the new (post-communist) generation of young people, these practices heavily diminish. We even have a cooking show on TV, where a Chef visits a restaurant in every episode and tries to improve the kitchen, perception of the staff and an over-all enviroment - very much in style of Gordon Ramsey. So yes, I'd say for sure - our post-communist country is finally changing and tries to catch up with the western culture in every aspect and therefore gastronomy is no exception.

There is a lot of water in the muscle. When it dries it intensifies the taste. It also allows time for the natural enzymes in the meat to break the muscle down further which makes for rich tender meat. Some people like it and some people don't.

After watching multiple shows on food production, I've come to the personal conclusion that I'm not sure whether or not raising & killing an animal for food is right or wrong, as long as it lives a pain free life. The only thing I'm very certain about is that there's hardly any justification for having animals spend a life in miserable conditions in mass production.

So typically, pigs that are placed in very small quarters, in poor living conditions will begin to bite each others ears or tails. Rather than improving the living conditions, it seems better instead to cut the tails.

This is rediculous, free range meat is even more unsustainable than factory farming. With growing populations, demand grows meaning it would require more land for them where all the time, effort and resources(water, feed) could be going into growing vegetable/plant based foods that could feed more families and for longer time. Now that's what I call sustainable.
