Yoshimasa Ikeda learned how to make sushi back in Tokyo under the instruction of his father. Wanting to see what more of the world had to offer, he ended up on America’s west coast. He eventually settled in Portland, Oregon and created Yoshi’s Sushi, a food truck that serves fresh sushi daily. His cart specializes in Hokkaido scallop, salmon, and tamago nigiri. He also makes classic rolls like the California roll and spicy tuna roll. After spending many years training people to become sushi chefs, Yoshi took a demotion so he could spend more time cooking, and then went on to start his own business.

I agree. Sometimes, promotions aren't the golden step-up-the-ladder we think of it as. I've heard some cases like that when I worked in corporate - people who resigned one year after promotion because the new position barely gave them any happiness.

@@jmason0622 This is true. I've heard stories of people going from technician to junior manager position for way more money, but they hated everyday. End up going back to what they did before for less pay because if you love what you do, you don't work one day in your life. Money is great, but it doesn't solve everything. Just don't put yourself in huge debt or need to buy the next fancy widget where money controls you.

This is a great business model-- fresh sushi without having to pay the overhead costs of a brick and mortar restaurant. I've probably payed twice as much for sushi that looks half as good as this. I would absolutely eat this quite often if it was near me.

I've eaten Yoshi's sushi a number of times. It is as good as you imagine!!! He is also so kind and friendly. I knew he worked a lot, but this really shows it!! Well done, Yoshi. So grateful you're in business.

I love hearing how he keeps the menu small and fresh. It’s just the best way to do it. Yes it’s a lot of work and there might be more anxiety but if you take care and pride in your food and work and prepare food that can help you keep up you’ll do fine so that makes me happy. Keep the menu small and the quality high. I’d rather go to a place that has either one specialty or a small single page menu I want a good quality meal and to get to know the chef is one of the best parts of these type of businesses :)

Much respect, I love that you are doing sushi on a food truck! I am learning how to do some Japanese food because I wanted to expand on my range of what I can cook. I grew up on Italian American food and that is my specialty but I adore Japanese food, I love how it combines aesthetic beauty and flavor! I am hoping to get a food truck going for myself where I can make really good Italian American food.

I made it! Called Yoshi late morning for afternoon pickup. Going for sushi has always been about the experience of the location, interacting with the chef etc. This is what always made it memorable! Yoshi is able to put that memorable experience entirely into the food! Amazing chef! Thank you!

When he said that he wanted to move out of his city, Tokyo, to see the world I had to think of Anthony Bourdain when he visited his friend Yasuda in Tokyo - who also raved about how interesting Manhatten was to him and Tony just said how many different Manhattens there are for him in Tokyo. Doesn't matter how large the city is you come from - it is what you know and everything else is what you want to explore.

Dear Yoshimasa Ikeda! What you are doing is art and just a great love of food. Ecstatic and impressive!!! Since you are originally from Japan, this reminds me of a video about small Asian dwarf otters, Miss Hana, Professor Kotaro and Captain Aty 😂😂😂 living in Tokyo. They adore fish, they are crazy about salmon, scallop, sashimi 🤗, and especially Miss Hana , who "kills" 🤣 for salmon. I have never seen in my life that animals are such gourmands, laughter.... Oh, yes, they have to try your specialties, yummy, yummy, yummy, 🤣🤣🤣🤣🤣 Thanks for this wonderful video from Croatia! ❤
