Two years to the day since this was first posted, just before the stuff hit the fan and Aquavit NYC is still keeping on. Chef Bengtsson keeps it strong and authentic, at least according to Scando-Americans. They provide such a wonderful culinary experience. Amazing fare to be had if you can't make it to Stockholm.

The only thing I'd do differently is put a little bit more cream into the breadcrumbs and not use panko but breadcrumbs from stale bread at home, feels more traditional and home for me, but this recipe is still awesome! Big love from Sweden!

@@Warlundrie I find that if I do not have any stale bread, I cut up fresh bread into cubes and make croutons in the oven, Then if I need crumbs, just blitz some croutons. Always nice to make your own.

Moms Swedish meatballs are still the best. (Same way her mother made them ) Finely grated onion and potato (boiled before) instead of breadcrumbs. Much better flavor. (Other parts are the same, some heavy cream, salt, pepper, and a mix of ground beef and pork), or you can use all pork which makes them super moist (and more unhealthy but still ;>) Being Swedish I tried most ways to make meatballs but this is still the ones I like the most

The potato Ricer is the way to go! You can make these even better by using cream instead of milk and also by heating the cream and butter before incorporating them into the potatoes imo 😋

important: SWEET pickles! Not the salty ones or polish dill pickles. But pickles aren’t 100% essential. lingonberries is though. Sometimes when I’m lazy and want meatballs fast I just do premade meatballs, put on butter, make a sloppy pan sauce, stomp potatoes in butter if I can’t be arsed to mash em properly, and lingonberry jam from a squeeze bottle or jar.

Quite a few swedish dishes follow the french style: Butter, Sauce, nice potato variations, mustard, berries or herbs. But with some twist in the form of some warm spices, and local specialities as condiments.

She says that the pork has more fat. But it is actually the exact opposite. Pork meat itself is very lean. Especially if you cut away the fat. In beef, the fat is marbled throughout the flesh. So you add the beef for fat and which is the reason you can make 100% beef meatballs no problem... And you add the pork for more flavour. Unless you specifically add pork lard to make it fatter.

She specified "pink" center, not red. As long as the center of ground meat is raised to 65°C/149°F for at least 90 seconds, all pathogens will be destroyed.
