The One-Armed Chef is a travel and food show like no other, fronted by a host like no other. Giles Duley is a photographer, humanitarian and chef, and he indulges all of those passions in this documentary series. In it, he meets or reunites with people around the world who have lived through extraordinary struggles or experiences, and occasionally he just meets people making amazing food.

I love this guy as an interviewer. His honesty brings out so much from the interviewee. We need more of this.

I agree, in content terms, but he speaks with food in his mouth [edits in others too] during some of the bits that complete the recipe and method for dishes and I can't give time to that. I have a small food page for people who cook [people who just eat too, but focus on growing, freshest healthiest ingredients and making it, not just eating it] I won't share him on, only for that, people struggle with it more than me and he's no where near the worst food presenter for bad food etiquette.

This is what a food show should be. Loved this documentary and so much more representative of Scotland than just seafood and buckfast (loved that Munchies series tbf). Looking forward to more of Giles he’s a wonderful person and presenter ⭐️

I think it was a really important topic to talk about men's mental health, especially in kitchens. Its often never really looked at. I've been working in kitchens for about 20 years and I've seen some shit - as well as been through some shit. Men's mental health and suicide rate is a real thing and a huge problem that should be addressed more. Thanks for touching base on this topic.

Yes mate. I did five years at a One Star and I’ve seen a lot. Luckily I think times are changing and attitudes are changing too. We can save more people and save the industry as a whole if we have a massive cultural refresh.

I hate working at restaurants because of this. Gotta say that almost every single person in my 16 years was dealing with some shit and toxic as fuck. I'm already dealing with the public, it sucks having to deal with coworkers that don't get help or do drugs. This is coming from somebody that is depressed and adhd as hell.

💯 the biggest killer of men under 45 in the U.K. is suicide. That’s just shocking. Really good that the guys talked a little about it.

Indeed. Men's mental health issues often go ignored. We're just supposed to "suck it up" as males and endure the hardships and it's compounded by expectations of being men. No wonder we die much sooner.

What a wonderful human being. Giles is an exceptional human being. I think he just does what he does and keeps on going. He possesses unbelievable strength, not only to survive such great tragedy, but to encourage and support all of us to be better.

I'm a Scots-Irish American. The Irish get all the respect in this sense (and rightly so) but we Scots are also a very eloquent, spoken/written word loving gabby people!

When the chef's talk about treating people like the way they were rings so true!!! I delivered mail for years and can remember it was expected that I would break down and cry while learning the route. It's so wrong. Things have changed but not enough.

This was such a beautiful documentary. I live in Edinburgh, and have been through the food poverty. But to see how so many people are coming together to offer so much to communities, producers, suppliers, and chefs a way to shine through food and help others is incredible. Loved Soul Sisters, but Pams laugh got me, all her passion is in that laugh!

this is so good, down to earth, but not in anyway boring or uninspired, what food should be about. I don't like the ego that can ruin a lot of chefs creative output, it's a huge epidemic in all forms of modern art as well. Brilliant stuff, look forward to more.

im a chef and i am thoroughly enjoying this show- because my grandfather was Scottish ....and I love the principles they are teaching and talking about- its things I think about a lot as someone who works a lot...

I was intrigued by the information about his own philosophy that leaked out as he interviewed others. The last talk with tiny chef got real when she asked why he had to take pictures of war "Food is the opposite of war." During the time of Buffalo & elem school shootings, it seems prescient to get this film in my queue.

6:10 "it's good when theres silence" I once made traditional bangers and mash (everything came from a local farm, the sausage from a local butcher, etc.) for my housemates. Everyone was all chatty while I was playting, but as soon as everyone took their first bite, there was no more talking ... everyone was just focused on the food. Once everyone finished, everyone leaning back in their seats, I just asked "bourbon?", everyone nodded, and we all stepped out on to the porch to sip shots of bourbon, while smoking a cigarette (even the non-smokers wanted a cigarette).

That conversation in the beginning. Damn. I was just like. Yup. They both right. The looking up at people just to see them be an absolute wreck of a person. The long hours with nothing else going on in life, that line hit home pretty hard too. It’s an industry that may have a long time of being around. But is still mentally in its infancy.

Lovely butcher girl, great ideas! There's another cut that's not known to the public: it's called the 'dessous de palette' in French, although French people mostly never heard about it, which actually translate to 'under the shoulder blade', two flatish lean muscles each side of the scapula, which are extraordinarly tender, juicy and full of flavours. Get your butcher to keep it for you, you won't regret

Lived in Scotland my whole life. The food and culture is amazing but often people can’t look past the meme of deep fried mars bars and buckfast.

@@buckwheatboi The port towns do the local fish but some odd 90% of all our regional delicious fish/meat, and whisky, is shipped off to Japan on a huge markup. Heafty agree that the older generations are accustomed to what is basically wartime gruel.

@@buckwheatboi Sma egoes for places like Hawaii, who are reduced to eating rice and imported spam cause everything they grow and fish they export. I've found thr Isles were the best for local whisky and cheeses, delicious. Totally agree on the langoustine, if youre in any way into prawns its heaven.
