Why use fish curry powder instead of sambar Curry powder?

Hi! That's a great question. Well, Sambar Powder is essentially the same as Curry Powder. Sambar powder made of a mixture of essential spice mix same goes to Fish Curry Powder but both of them consist the same spice mix with different a ratio. Since amma already added the required ingredients at the beginning when stir frying and lightly caramelized. Most of the spices including curry leaves and so on had infused with the sambar mixture. Hence, amma tend to add fish curry powder as it gives a sharp flavor to the sambar as well as a great aroma to it. It's not necessarily taste like fish curry tho but it's different. Sometimes Amma's does use Sambar Powder for a quick meal but cooking is an art. I encourage you to try it out. I hope this helps you out. Have a good one!
