Traditional peanut cookies
Recipe:
Dry ingredients:
340g roasted peanuts
300g all purpose flour
150g icing sugar
1/2 tsp salt
Wet ingredients:
150g peanut oil, If it’s too dry add a bit more oil
Others:
Egg wash
Peanuts for topping
Method:
1) With a food processor or mortar and pestle, grind roasted peanuts into a sandy mixture.
2) Preheat oven to 180°C and line a baking tray with non-stick baking paper.
3) Mix together the dry ingredients in a mixing bowl, add in the oil. Use a spatula to mix it all until the dough comes together. If it’s too dry add a bit more oil.
4) Weigh the dough at 8-10g each and roll into balls. Top with a peanut and brush a thin layer of egg wash on each ball.
5) Bake in preheated oven at 180C for 15-20 mins or until the cookies are slightly brown.
6) Remove from oven and let it to cool before storing in air tight containers. Enjoy!
