Great video! The little church is called a chapel and the dining area is known as the 'great hall', where the ruler of the realm would hold court and yes, dine. The balconies you observed there would have minstrels performing. He produced a magnificent replica of a mid-late medieval château/castle.

I just called them and the fee for afternoon photography is $25/person not 50.

Hi there. That's great. They must of lowered it. When I went originally I wanted to do the private afternoon photography session and they told me 50 per person over the phone. So we went with the morning which ended up working out just perfectly because there were plenty of opportunities to get pictures with no one around. Hope you enjoy the castle!
