So in cambodia we have a similar pork belly dish that most dont know about. It's called kaw in general, but the version I'm thinking of is kaw sach jreuk (pork belly) often with bamboo and whole chicken or duck eggs that are browned in the stew, over rice. Caramelized palm sugar and kampong black pepper are the forward flavors. Cooked until tender. I wonder now if it was brought there by Chinese immigrants. We omit the 5 spice nowadays. Lots of garlic and shallots too.

This episode just warmed my heart. My friend and I tried Happy Lamb vegan broth and it was surprisingly good! Then we went to WesternCo.
