Yes they will with the proper adapters

Do the seats adjust up and down?...Being short, its hard for me with bucket seats and I need to be able to actually see all the way over the steering wheel.

Problem with the seats on my 65/66 fastback is that they sit you (front seat driver/passenger) much higher than the stock seats. After grinding the snot out of the base I was able to get them close but I will eventually need to remove or fabricate a shorter floor box.

+Michael Hoffman How much higher? I was looking to put these on a 65 coupe but if they add more height that's no good for me

guessing 2". I'd buy again but will have to adjust as mentioned before. I'm 210, 6'2" I get away with leaning the seat back to the roll bar. I'll eliminate the floor boxes when I re-due the floors next winter.

The only safe way to raise the seats would be to build up the seat platform which would work for you but if anybody taller drove it they may be uncomfortable

Typically only a power seat will move up and down. These could be fitted to a late model power track but the seat would end up sitting pretty high.
