The knife is 1095 Steel and the Mustard was left on there for 1 hour per side. Hopefully this helps clear that up a bit.

Literally was about to be my exact 2 questions. I did a practice round for 30 minutes and it looks decent but doesn't have those really sharp dark etched lines right up against the mustard

Most store bought butcher knives are stainless steel, which are made specifically to resist patinas. If you can find a high carbon steel butcher knife, that will pick up a nice patina.

Mustard etching is a forced blue patina, with proper care, it should not fade. The parts of the blade that did not react with the mustard can still rust.
