Toffee Kunafa Written Recipe :
Ingredients:
Katif (Kunafa dough) 400 grams
Butter 50 grams
Powdered sugar 2 tbsp
For the Coconut Toffee Sauce:
Fresh cream 100 grams
Brown sugar or toffee sauce 1/2 cup
Thickened coconut milk 1 - 1/2 cup
For the toffee cream:
Cream 1/2 cup
Brown sugar 1/2 cup
Whipped cream 1 and 1/2 cup
Chopped pistachios (optional) as required
Cream cheese 1 tbsp
METHOD :
Melt the butter in a large pan, add the kunafa dough, and mix and roast until it changes color and becomes crunchy. For the coconut toffee sauce, whisk together the fresh cream and brown sugar. Then add the thick coconut milk. Mix well. Now make the whipped cream from the cream cheese and set aside. In a large mixing bowl, mix the cream and toffee with 1 teaspoon of vanilla. Then fold the toffee cream into 3 tablespoons of the whipped cream. Layer it with katif in a glass. Add 1 tablespoon of coconut toffee sauce. Then add the whipped cream and the pistachios. Repeat this process to form the glass.
Mutton Mandi Written Recipe :
Ingredients:
Mutton 1 to 1.5 kg
Turmeric 1 tsp
Salt to taste
Mandi Masala 1 tbsp
Lemon juice of 1 lemon
Chicken powder 1 tsp
For boiling:
Capsicum 1 large
Carrot 1 large
Tomato 1 large
Onion 1 large
Small green chilies 5-6
For Whole all Spices:
Cloves 4-5 pcs
Cinnamon 4-5 pieces
Star anise 1-2
Cumin 1/2 tsp
Black pepper 8-10
Salt as required
Water 2-3 liters
For Mandi Masala:
Dry lemon 3 pcs
Dry coriander 3 tbsp
Cumin 3 tbsp
Black pepper 1 tbsp
Cinnamon 4 pieces
Clove 1 tsp
Green Cardamom 1 tsp
saffron (optional) 1 tsp
Chicken powder (optional) 1 tsp
Method:
Marinate the mutton with all the ingredients and keep it for 2-3 hours or overnight. Put the mutton and all the ingredients in a deep pan for boiling. Then add water and salt as needed and boil it until the meat is cooked. Add rice to the pan and cook.
For mandi masala, grind all the ingredients to make a powder and store in a jar.
