As a competitive barista having a similar at-home set-up, you're doing great! Agree with the grinder playing a huge role in coffee, perhaps you also wanna look into water chem, perhaps something like the PEAK? And the Lagom mini as a more versatile grinder for filter too. But I love the balance between interior design and coffee, as a mirror for myself too... You're doing great fam, love to see more!

Im actually visiting glitch in a few weeks. I love their selection, thats how i found out about pepe jijon as well as bermudez thermal shocks. If you want something similar, check out Manhattan, Dak, and sometimes Hatch. They all have mind blowing beans. And congrats on the F58, once you go lever its hard to go back 😂

Love the vibe of your videos! There's a process of fermentation where they store the beans with certain fruits like strawberries, lytchi etc. . I remember tasting one from Colombia. Maybe that's the secret for those beans as well!

I think not entirely from where they store beans but from the coffee origins, meaning it's more due to what they call 'terroir" - its environment e.g soil, climate, and altitude as well as how it's processed; roasted, and coffee variety.

Hey Brandon. Nice setup. Like the aesthetic. How long have you been using your sage dual boiler and would you recommend it? I’m intrigued by it, but I’ve heard and read a lot about it, and some say that it’s not that reliable and break often. What is your take on that? Best regards from Denmark 🇩🇰

The flair makes a great espresso and is fun to use, but eventually the novelty wore off. Sold it after about 8 months and just stick with my Quick Mill and use the flow control.

You mentioned the beans come from Japan but the label says Columbia. Are the beans roasted in Colombia and sent to Japan?

Hey Brandon! May I ask what is the size of your Ikape Knock box? Because I have a 58mm double spout Rocket Espresso portafilter and i’m thinking if that would fit the portafilter container of the knock box if it’s not a bottomless portafilter? Hope you can answer my question. Planning to buy the exact same knock box. Thanks!

Really beautiful setup! I've been told that the most important part of your espresso setup is the grinder, is this true? It seems that you're investing more into the espresso machine(s) rather than the grinder?

Hey Brandon! Love the setup! Just started my home coffee bar and espresso journey. What’s the ratio you usually go for when making coffee? Right now I’m trying for 1:2 (18g coffee) but I don’t know how many seconds people achieve that 😅 would love to hear your experience!

I use a Breville Bambino plus. I usually get 30-35 seconds with a 1:2.5 ratio. I do this cause I like the flavor of 1:2.5 much better than 1:2. This would depend on your beans as well. Also I use 20g of beans, which yields 50g of espresso. Hope this could help.

Heyo! For light-roasted coffee, 30-35 is a solid option. If the option to pre-infuse exists, something like a 3-3.5 bar pre-infusion for 4s, rest for 6s (you're 10s into the shot now) and 9 bars for 25-30 seconds (total shot time 35-40s) is a great recipe to try out too! You could pull 42-45ml for 18g coffee, and while that removes a bit of the body, the flavour notes come out much clearer, especially with that pre-infusion. For a medium/dark roast, 25-30s (on 87-89 degrees if you can change the temp) with 36ml out will get you a great balance between texture and those chocolate/dark berry notes. Hope it helps!

Those beans probably are infused? Standard fermentation methods can bring out certain aromas and flavors, but they’re typically not as pronounced as infused coffee.

3 machines, one grinder. Howcome you choose so many machines (minus the flair as it is quite unique) over an upgrade to the grinder or add another higher end grinder such as a df64, p64 etc etc? No hate, just curious as to why the two machines!

i never bought these machines, they were all sent from brands! so is my grinder. i'm pretty broke so I can't afford a super nice grinder but i would say a higher end grinder is most important

Is the cabinet free standing or do you have it attached to the wall? I've been trying to find a bar setup with some Ikea cabinets but didn't necessarily want to attach anything to the wall.

for espresso is better to wait about 2 weeks and then use them. before that they are not stable and have to much gas in it

Colombians are co-fermenting/infusing a lot of stuff into their coffee nowadays. Sometimes the coffee is fruitier than the fruit itself. IMO not a good thing.

Recently got 2 bags from KAWA in Paris, both Colombian, one is called Strawberry and the other called Coconut. Tasted wild! Artificial though. Problem with these Colombian 'experimental' processes is they aren't being transparent about the method nor additives used.
