Just a tip. Under your sink storage could expand if you put the holders closer to the front. Then you can put large items that you almost never use but don’t want to get rid of.

I have that simmer pot and love it. I bought it last Christmas season and kept it on the stove with cinnamon, cloves, orange slices, spruce sprigs, and essential oils . It's wonderful, also I gifted it a few people
