Hi Chris just wondering since you are very knowledgeable about cooking steaks, does cooking steak straight from the fridge while cold shock the meat and contributes to toughness or best to leave on counter to get room temperature?

Hey Angela. Good question. Usually I let mine come to room temperature but not for the purpose of toughness as I’ve never seen that have an effect. I let mine come to room temp so I can get a proper sear on the outside and cook them through properly as keeping them with a cold center can make it hard to get them cooked to the temperature you like without overcooking a lot of it. I like to let mine sit out for at least 30-60 minutes before I cook if I can. 😊👍🏼

Definitely going to try the dry rub and these toppings! Maybe a silly question, but I imagine you can use a dry rub even when doing a reverse sear (like smoke then sear)? How do y’all like the smoker on this little guy?

@@vsolo21 you definitely could do that. I haven’t smoked with this yet but I can tell it will work well. It’s very easy to control the temperature on such a small area. As long as you don’t get too much charcoal it should be great. 😊👍🏼

How long did you cook your steak on each side before you put the topping on and then how long did you cook the topping before taking it off the grill? Love Love all your videos...Vicky

Hey Vicky! 3-5 minutes per side (variable based on temp of your grill or skillet), and as soon as you flip to the second side you add the topping. Cook until the steak is done with the cover for the second side to cook the topping. If need be just rest the steak 5-10 minutes and then add the steak under a broiler for a couple minutes to brown and finish cooking that topping. 😊👍🏼

I prefer my ribeyes, porterhouses, New Yorks, tenderloins, picanhas and even tritips to stand on their own with just whatever seasoning profile I use for the sake of the texture and keeping the beef as the focal point. If I cook a less pricey cut of meat that's lean, like a sirloin, I'd go for something like this for sure. If I go for a fattier inexpensive cut, like a chuck, I hit it up with a homemade chimichurri with enough acidity to cut thru the richness of the fat.

Very understandable. Something to consider, I have been told your recipes taste even better than the traditional versions, that is with me making them considering in the past my daughter used to tell everyone that l can even burn water because it is true. Think of a Food truck playing both of your music with your amazing stories posted where the people in line can read and see before and after pictures for inspiration that they can do it too. I live in a very small town that you can walk across in a few minutes and that is also stopping in the middle of Main Street to visit with friends. They had a restaurant that people drove to from across the state and country just to eat there before one of the owners died and the restaurant was closed. It was more expensive than the surrounding restaurants and it was a reservation only restaurant with atmosphere.@@ChrisCookingNashville

I appreciate it. Unfortunately we’re still talking about 2-3 million dollars in startup money and marketing/business expenses plus working 80-100 hours a week to serve a niche market that wants food convenient and cheap when the current food system makes it prohibitively expensive to run a food business with these kinds of ingredients.
