Since acid inhibits bean tenderization, the beans won't get much more tender during the baking phase, with all that acidic tomato and vinegar in there. That's why you need to completely cook them first. Hack: If you ever screw up and start cooking beans in an acidic environment, and (after 2 hours) realize that they're still tough, *FREEZE* them. Then, once frozen, re-heat. They'll be fine. The freezing breaks down the cell walls, much like cooking, resulting in tender beans. You're welcome.

You forgot something. Acidic based marinades or what ever acidic only benefits tough protein. A bean wont benefit from any acid. only from boiling.

Chef John, I have to thank you for improving my marriage. My husband has become a true culinary enthusiast because of your videos. We clearly have very similar tastes to you and even dishes with ingredients I am usually skeptical of have come out amazing. He's constantly trying to perfect (and experiment) in the kitchen much to my enjoyment! To further explain your influence, this morning he came over. Took hold of my pinky finger and gave it a tiny wiggle. I gave him a confused look and he announced... "Un petite shaka shaka" We both had a giggle.

I must say they look delicious! And a big bravo for making them! Four things I would add/do to this dish (as a Greek and three of them are from my mama's way of cooking γίγαντες): 1. Double the amount of onions. 2. Put some thin slices of carrot in them (you can use the potato peeler). Carrot does two things in this dish: a. It sweetens it and b. takes the farts out the beans (very important!!!) 3. Sprinkle a bit of flour on top when they're ready and broil them for a few minutes. The micrometer thin crust makes a huge difference! 4. Pour yourself a glass of Ouzo along with them. You'll understand what I'm talking about. Cheers and get well soon!

Absolutely authentic Greek recipe. Use veg broth and it is vegan. I am a meat lover, but this is one of the dishes that stands on its own. Search for authentic Greek Giant Beams and Congrats Chef on doing your Greek research homework. Advanced Greek Grandma Tip: when boiling the beans, throw two whole cloves and later discard along with the bay leaves Tip #2: Add diced carrots

I like to sautee the onions first with garlic and celery. I also add 2 cooked carrots as well and a cup of olive oil goes in while baking. I know this is your version, but you did say they are Greek and we prepare them like mentioned above!

I just made this recipe with canned Great White Northern beans, and it was very good. The sauce still needs about an hour to cook in order to thicken and develop the right flavor.

Chef John, next time try making them the way Greek grandmoms do it: Soak the beans overnight in luke warm water and salt Replace the water to remove excess nitrogen Add fresh water Add to the water, celery leafs, carrots and chopped onion in chunks and ofc salt and pepper Add olive oil (generous amount), bay leaf and tomato paste (2 table spoons approx.) Set to boil Once tender place the batch in a baking tray Place in oven and when it starts to thicken, add chopped bbq sausage or polish kielbasa smoked sausage on top Once caramelized and the sausage is baked to almost a crisp remove and serve with feta cheese either on the side or shredded on top, plus a a sprinkle of olive oil and a tiny sprinkle of oregano. You will be amazed. It's a promise Get well soon and keep up with the puns....eerm good work ♥

Which Greek grandmother adds sausages to gigantes ???? That's strange. And he replaced the soaking water with fresh water when cooking, not necessary to point that out. Also, there's a reason why we don't add salt at the beginning when cooking beans, you may want to check your facts. Peace

As a Greek, i say this is correct. No dill! Only Celery leafs(and sometimes finely chopped root). Also sautee the onions and garlic before adding them in the mmix. And the use of country sausage in it is really a thing, although traditionally it was without sausage as it there was no abundance of meat back then...My granny used to put sausage in it and we still do. Chef John really try this recipe out, this the way true "fasolia gigantes" is made in Greece.Try searching for recipes "fasolia gigantes" or "φασόλια γίγαντες" in google for all those doubters...

Chef John, excellent idea going with a meatless Greek recipe . Well done. There are variations which include carrots, celery, leeks and parsley. Those additions make the beans more of a meal than a side dish.

Stagonas of course, Greek cuisine varies from one region to the next. Recipes from northern mountainous regions use different ingredients and techniques from the islands, for example. Chef John May have been inspired by a regional recipe of Greece that doesn’t use vegetables. That’s the beauty of sharing recipes.

Hi chef John, Greetings from Ireland. Having this very tasty looking dish today. Love your recipes! A tip you most likely already know to speed up the preparation time of all dried beans in general. Pour boiling water over them. Soak them for only one hour in this. Then cook them in a pressure cooker for only 8~10 min. Voila! Kind regards Garry

Serbian baked beans recipe is a bit different. My grandma used to cook 3 different sizes of beans. While the biggest one are cooked, the smallest ones are already dissolved which gives the soup more thickness and no tomato sauce is needed for baking. On our Orthodox Christmas we serve it with fish fillets 😍😍 However, I have to try this one with feta, dill and honey. Get well soon, chef John.

My grandma makes this a little differently but I'm sure this also tastes great. While she's boiling the beans she sautés a yellow onion and a carrot, which she chops finely, adds those to the casserole dish with some dried mint and only half the amount of tomato purée and adds the bean cooking water instead of fresh water.

One thing we don't use in Gigantes (what we call the recipe here in Greece) is honey, we use a lot of carrots though, which could be considered a sweet component in the dish.

Gigante comes from " Γίγαντες " which means Giants in Greek :) And thats my mr Portocalos moment right there......im Greek after all...... :D thanks for the recipe im sure it tasted as it should ;) (ps : i double boil the beans in order to reduce significantly the "flatuation" caused by the beans ;) edit : Italiani Greci: una razza una faccia

A stable in every Greek taverna for lunch and one of my favorites. Right after the baked artichokes, which Greeks eat during lent. Maybe you want to make a recipe for those as well? I admit for these things I do miss Athens....

We Greeks mostly eat traditional food in our homes. We eat on tavernas more like fast food. Some tavernas and especially in Athens make some traditional food but I believe it's nothing like home traditional food. I'd suggest you next time you visit the country go eat to someone's house as we love to cook for friends.

Aww I'm sorry to hear you were sick when you made this video Chef John but you were a trooper to continue cooking :) Greek baked bean casserole is such a delicious dish. My Greek hubby made this for a romantic dinner for us a few nights ago and it's without a doubt one of my favourite meals. When Greeks feel a bit more carnivorous we tend to add some sliced rustic or smoked sausage right before we pop the dish in the oven so the flavored fat can mix with the beans :)

Here in Greece we use a cup of olive oil , celery , carots and some green pepers. We skip the vinegar. But i am sure your recipe will taste good too. Greetings from Greece.

@@TheMasterSciFi yes, but the refined part of white sugar is the part that's bad for folks who struggle with it. Honey is a better option.

You can find real "Gigantes" beans in a Greek ethnic grocery store. I live in Greece and they are now bringing them here from China. Try to get the real thing. You can save a few and plant them in your garden. You must fully cook beans in plain water. Once you add salt or acid, They do not soften properly.

When i make this recipe i usually put also some thyme, chilli flakes and smoked paprika which makes the beans taste like meat! Its one of my favourite dishes!!

Thanks for presenting Greek 'inspired recipes. In Greece and Greek traditional home cooking we actually sautè first the onions and mix in the sautè pan the rest of the secondary ingredients and then put it on the beans and of course bake the whole thing. We don't use honey and cayenne pepper (I will try it though ). Maybe, just maybe some people use a pinch of sugar the 'calibrate' the tomato acidity. Furthermore it would be perfect even with classic white onions . I prefer white ordinary onions in cooked food and of course red onions for Greek salads of all kinds. Finally usually we eat it with a slice (or chunk) of feta like you show it in the end and not with crumbled feta. Personally I think it is best eaten lukewarm rather than hot. A Greek salad is a must to serve preferably without feta cheese if we used a slice on our baked beans dish.

It's funny, I just watched this yesterday and today, as I was walking back home from work, I remembered there was a greek restaurant across the street from my apartment and so I went there and saw that they had Gigantes on the menu, so I had those for dinner tonight and it was great.

My wife and I have found a bunch of baked bean recipes from the late 1800's to early 1900's. Our favorite so far starts by boiling the beans with a clove studded onion. There has to be more and I know thatChef John would be the right person to bring them back.

1:25 last time i learned about soaking beans is that you soak em in the pot your gonna cook them in, and you use at least the ammount of water that you are going to use to cook them, but just filling the pot with water is the best bet, you can always strain em out.

for us Greeks, cuisine and our foods is kinda a sacred thing... and is really really really really rare to see a non Greek to perfome dishes welll... first it was the chicken soup, after that the chicken in the oven, after that a tzatziki and now Gigantes (as we say it here in Greece)... and you nailed all of them :) i am really proud of you chef John ! just to inform you from places to places they put parsley instead of dill... and the tomato sauce amount is less (or even no sauce at all to some Islands)... all versions are extremely delicious :)
