Our Abalone in South Africa are also large like the American and Aussie ones America also has the smaller red ones. I use a French Recipe that a French chef passed on to my dad. It goes like this clean, slice and beat the abalone, salt and pepper and put plenty butter in a pressure cooker,place abalone in and close lid bring up pressure on medium heat cook only 5/10 minutes or so or the butter is likely to burn. Take off heat reduce pressure remove lid add a cup or so of white wine and a sprinkling of nutmeg. Cook further without lid until the sauces have thickened then enjoy with rice. Since then I’ve discovered how to tenderize them without pulverizing the steaks. You take live abalone shuck them and stand them face down on a hard surface when the muscle sags and hangs slackly on one side give it 5 very hard wacks with a mallet place in boiling water for 4 minutes and then remove and prepare as you like, a fork should easily penetrate through the meat and it will be the most tender abalone you’ve had.

In South Africa they chop the ABALONE into small cubes - mix with garlic olive oil and some spices and chilli - scoop out the bud of a big Kelp thingy - fill it with the mixture - wire up the kelp bud then toss it on the coals until its cooked - absolutely delicious ❤

Having lived by Fort Brag on the West Coast of America we get a much larger Abalone here but we have to dive in dangerous waters to get them. right into the cold Pacific ocean. I would say on average ours will go 7 to 9 inches. They have be pounded well with a meat hammer and will pound out to around 12 inches and then I make them the same way you do from there on. I don't let them get to brown, maybe frying them on a med to med high heat for around 45 seconds per side (when you pound them out that far they cook really fast and of you cook to long (say over a minuet per side) you might just as well chew on your wellies since the wellies will be much more tender. Do you ever get any really large one or have you ever tried any American Abalones? Your look like the right size and I would like to try them some day. You make them look delicious with just a bit of sauce, lettuce, and fresh hot on a roll

Oh my god PLEASE! Those look so amazing! I wish I could get some ormer over here because these burgers (either the coated or even the non-coated) always make me want to try them! Sadly, the only options I have are frozen ormers from one of the Asian markets, to which usually have some kind of seasoning already on them. Or, ordering them online, to which - I'd get way too many. I don't want that many in case I end up not liking them.

come 2 new zealand almost every fish and chip shop has ormer burgers, or ormer fritters, but we call them paua pronounced power really delicious diced up and fried with onions and mushroom's till golden then simmered in cream.

I remember when I was a kid my mom had a abalone shell as candy dish which later turned into an ashtray 😢 it was so pretty before my mom started to smoke it looked like a dark opal all fire and blue with greens and orange thrown in this thing was ten inches tip to end she got at Marineland back in the day so when you see these abalone they ain't nothing come prepared to what use to be found.

The minimum size limits are available online. Also, as Jay often mentions, the season duration is also available so that you don't inadvertantly take something out of season. It's easy enough to make your own gauges, Smash and Sam have engraved theirs to identify species and body shapes. If you don't have time to make your own, I have seen these for sale in the UK at numerous shops around our coastline.

Fishing for Ormers may only take place from 1st October until 30th April. During the Ormering season, fishing may only take place on the first day of each new or full moon and the three following days. It should be noted that if a full moon falls for example on 29th April, fishing still cannot take place after 30th April. The minimum size for Ormers is 9 cm measured across the broadest part of the shell. Daily Limit: 20 Ormers / person, 100 Ormers / boat* * If 5+ persons on board. If less than 5 persons, individual bag limit applies.

I think your talking about jersey laws mate , there’s no limit of how many in guernsey , are season is 1st of January till 30th of April , no diving aloud , there’s 6 days in each month you can forage ormers
