Four of my roommates are from Kenya. I have had ugali quite a bit. I like it. They call it corn bread in English. I enjoy most of the food as long as it is not spicy.

PAM is not a maize flour. It's cooked and milled hominy maize (a whole grain if yellow) use to make certain Central/South America's dishes like arepa, tamales etc. You don't (need to) cook it, just mix with liquid (eg water), let it absorb, shape and reheat it (eg pan fry). I think you're looking for some sort of (fine) polenta.

No offense but ugali is bland, I don't know why Kenyans try to force others to like it. There are so many better carb alternatives, rice, potatoes, pasta etc...
