Don't abandon the double boiler method for melting (most) chocolate!! The kind sold specifically for melting/dipping is made with some kind of sorcery that doesn't turn into burning chaos when microwaved, but for regular baking morsels you've been doing A+ for years. Now I think I have to listen to some k-pop in order to understand this video on its deepest level

Candy melts are NOT chocolate. Neither is "almond bark" or "candy coating". Many don't even contain actual chocolate/cocoa butter, just maybe cocoa. They're kind of like white chocolate made with shortening instead of cocoa butter. They melt far more easily with less risk of burning, don't "seize" the same way as real chocolate, harden quickly into a shell without the trouble of tempering, and store without blooming. So, Pros: cheaper than chocolate, easier to work with for newbies. Cons: weird waxy mouthfeel, artificial taste, not even a little redemptive antioxidant content. Kinda gross. 😕

You CAN melt chocolate in the microwave. We even did it occasionally in pastry school (as long as the one really strict French chef was elsewhere) and it's fine. You can even temper it, although that's WAY easier with a double boiler. (We usually only used the microwave for making rum balls and the like with old leftover chocolate that had lost temper and/or bloomed). To safely melt chocolate in the microwave, start with a minute if you have more than a cup; half a minute if less. Micro, pull out and stir. Micro 30 seconds more, pull out and stir. Repeat. When almost everything is melted but there are just a few lumps left, STOP. Stir stir stir, letting that residual heat finish melting everything. It's not a fast process but it does work. If you're dipping stuff (you'll probably get a soft flexible coating instead of a hard chocolate snap because this is unlikely to temper the chocolate), you can remelt it with 15-30 sec bursts in the micro if it starts to set up before you're done.

I discovered My Drunk Kitchen, back in college, in 2011, laughing my butt off to Hannah's ice-cream recipe, about the same time I discovered Kpop, via the befuddling, amazing, bizarre "Lucifer" video by SHINee. The world of KZbin made so many things more accessible to us, whether individual creators, or foreign media. BTS videos got me back into the realm of Kpop with their amazing mashup of Western classical art, philosophy & trop-house pop in the Blood Sweat & Tears music video. long story short: Both are not everyone's cup of tea, but also REALLY GREAT. XD

You did great but a few tips from a former baker who made cake pops: - yes, more icing was needed - freeze the balls for a while to keep them together - the stick needs to be added before the chocolate, this makes dipping easier - knock off extra chocolate on the side of the bowl, it shouldn't drip down the side of the stick It's always more important to create something delicious then beautiful. But being beautiful helps.
