The cakes, were made during the war, when food was in short supply. The ketchup cake is made out of tomato soup, as well. Never heard of mustard frosting seems like too, much. PS, tomatoes are a fruit. When you have no food, these are a treat.

The powdered sugar is there to make the frosting light and fluffy. The only frosting I can think of that doesn’t use powdered sugar for fluff is whipped cream. Also two cups of butter for frosting is perfectly normal.(I lived in a bakery for quite a while so you learn a few things)

Sierra its a common thing from the depression era, fres eggs and fats were scarce and expensive, mayo contains both these things and was much cheaper and had a loger shelf life :)

Little tip!: use *gel* food coloring instead of liquid. This is not only because you are able to use less for a more vibrant color, but also because you are able to use less, it won't change the consistency if your recipe is consistency sensitive
