My Favorite 4th of July Dessert | Coconut Pudding Dessert

This coconut pudding dessert has been my FAVORITE 4th of July treat for over 20 years!! It starts with a buttery cracker crust, layered with a creamy filling (including a secret ingredient you won't believe!), and is topped with fluffy cool whip--summer dessert perfection. Happy Fourth of July!

Coconut Pudding Dessert
60 Ritz crackers, crushed finely
1.5 sticks unsalted butter, melted
1 container (1.5 qts.) french vanilla ice cream, softened
3-3.4 oz. pkgs. coconut cream instant pudding
1 c. cold milk
1-8 oz. container cool whip, softened
1/4 c. coconut flakes, toasted
Mix the crushed crackers crumbs with the melted butter. Press into the bottom of a 13x9in. glass baking dish. Freeze for a few minutes to solidify. In a large mixing bowl, add the softened ice cream, 3 pudding packets, and milk. Use an electric hand mixer (or spoon if you don't have one) to combine. Mix for about two minutes or until thick and well incorporated. Pour the filling over the chilled crust. Refrigerate until set. Spread the softened cool whip over the pudding and sprinkle the toasted coconut over top. Refrigerate again until chilled and set. Slice and serve. ENJOY!

The ORIGINAL recipe is a frozen dessert, but my cousin Barb refrigerates hers. I refrigerated mine and it was PERFECT!
