This is basically the perfect cooking video! I really appreciated how you showed and explained the steps, but also gave the reasoning behind them. Explaining the techniques and their basis is wonderful because it allows me to apply that knowledge to areas of cooking beyond just simply parroting a recipe. If you're looking for feedback from the community or want to know what your viewers are interested in, I love videos like this as well as more technically challenging or elaborate recipes in this format. I really appreciate your videos because they offer knowledge and a perspective on pastry making that I would never get to see as a amateur who bakes purely for the love of food. I took the souffle challenge today. I only needed 12 for the party, so I halved the 25 pc recipe. I even had to make it and let the batter sit for two hours before I could bake it, and it raised like a champ. I have never made a souffle before, and I'm not the first time is the charm kind of guy. But they turned out BEAUTIFULLY! Topped with ice cream. Everybody loved them. Thanks again, Mia. That was really fun. I am looking forward to your next video.

It’s actually more like a delicate cake! It rises nice and tall from the egg whites. The inside is cooked through :)
