Argentinean here, lived in Ecuador for a couple of years and to me they have the best seafood in Latin America, yes superior to Peruvians. Those seafood dishes that combine with plaintains, coconut, peanut sauce, etc. are out of this world.

The best about Ecuador is that you can get fresh food beacause of its different natural regions: coast, mountains, east, and the short time for transportation. In adittion, having different climates and latitutes favors the variety of foods. For this reason, Ecuador is a country with varied and excellent gastronomy.

Hi! If you wanna try more typical food I recommend you: encocado de pescado y camaron, cangrejada al ajillo y la tradicional, seco de chivo, seco de pollo, seco de cerdo, guatita, caldo de manguera, repe lojano, la Tonga, caldo de mariscos, mote sucio, mote pillo, locro de papa and if you like green plantains we have: bollo de pescado, corviche, cazuela mixta ( my favorite), tigrillo! We have more typical food but for me those are the most important!

Hello, here we have our history with ceviche born in the Valdivia culture, they prepared it from the Spondylus shell that is only found on the Ecuadorian coasts and was called the food of the Gods, although a long time ago there was no lemon, it began to be added with the arrival of the colonizers and hence the word ceviche comes from the ancestral language iche which means tasty, here we have endings of dishes, desserts, and even surnames with iche such as ceviche, viche, corviche, pechiche, Caiche, paiche, guariche, Seguiche, Ziche, Mompiche, Panchinche, guaviche, Theoiche, trapiche, peminche, etc etc was never influenced by the neighboring country Peru because it is very different from the Peruvian, they have the version of the half-Chinese chef Javier Wong who made it in his Chinese style because the fish is semi-raw and Ecuadorian ceviche is soup type and has different ingredients and there is a lot of variety, we are the country with the most variety of ceviche

Although there are Peruvian records called Inca or Mochicas, this is the oldest Ecuadorian data from a rigorous and exhaustive general investigation by the PhD I know Doctor Libertad Regalado who a few years ago published the book MANABI Y SU COMIDA MILENARIA , and the suffix ICHE, which until now exists in names in food dishes such as: corviche which is a kind of green and peanut cake stuffed with fish, fish viche or Prawn which is a soup, pechiche which is a seed and it is made into juice, and the ceviche. Well, how the food and the name were promulgated, because the Manteños - Huancavilcas, great navigators and merchants from the Pacific coast who arrived in Mesoamerica (Central America) to Chile including Peru, carried with them the red gold that until now on the Isla de la Plata In front of Manabí the spondylus shell continues to be given and eaten, it was extremely precious as a symbol of spiritual power, of abundance and of course the chiefs, curacas and shamans the elite consumed it in the form of cevICHE. All this information about our ancestral and varied foods is in PDF MANABI AND ITS MILLENNIARY FOOD by Libertad Regalado, postscript: the doctor was invited to give a conference at the San Marcos University of Lima and at the Cordón Blue academy with the topic EL CEVICHE DE SPONDYLUS, THE ELIXIR OF THE GODS, where no one, no one refuted what was stated in Lima. I leave a report from the ICHES kzbin.info/www/bejne/o4iTnn5_r7R_mJosi=dImWf49ZESuSduaM

This should be interesting a Gringo opinion on Ecuadorian gastronomy. The shrimp ceviche is definitely really good. (1. Euaviche 2. Cebiches de Rumiñahui). Corvina (fried fish) as you stated Central market in Quito is the best place (Mercado Central) and the fried pork (Hornado) are quite good recommendations (Sangolqui - is well known for the Hornado). You did a great job. Greetings and blessings from Los Angeles, California U.S.A.🤗👍🙏 Missing of the list was the fritada (fried pork -sort of resembles spare ribs).

I stayed in Las Tunas, Ecuador for about five weeks 10+ years ago. The group I went with stayed with host families so we ate mostly at their homes. The meals my host family made were usually simple but delicious. One thing my host mother made for me regularly was a pink tea. The other people I went with weren't served it in their homes. My host mother said it was medicinal but she didn't know the name of it. I believe she said the leaves came from Venezuela. I have been trying to search online for what it might be. Have you heard of such a tea? I would describe the flavour as more floral, rather than tart, so it definitely wasn't hibiscus, but the leaves made a light pink, clear tea.
