SISA is one of the most easily recognizable character in Noli Me Tangere... In fact, she is way popular than the lead character in Noli Me Tangere.

Most people would know Maria Clara and Sisa but less of Crisostomo Ibarra because their names are easy to remember and are very interesting. Even Padre Damaso is more popular than Ibarra. 😂

next time you can add a bit of oyster sauce to balance the sweetness over the sourness and saltiness of adobo and its optional this i recommend for the pork adobo, use red onion for this one. then use 1 small calamansi extract for the last 3 minutes while simmering then cover again with the lid for cooking the chicken adobo, white onion is best for this. This method can make it much more on savory side than salty for additional texture and ingredients, you can fried or baked thin wedge potato to garnish the adobo or put boiled egg or boiled quail egg as well. (you can put both boiled egg and fried potato at the same time, if you like). these additional ingredients is more like a Tagalog version from southern part. by the way use a whole peppercorn instead not the powdered one. Hope you enjoy it next time

@@jessicaleeseul my recipe is simple.. 1/2 kilo adobo cut pork belly, marinate it with mince 1 club garlic, pepper, soy sauce must be balance or same as level of the vinegar if its 1 cup ,optional brown sugar 1 teaspoon. Marinate for 1hr. Cooking procedure: Put the marinated pork with its marinate in a pan then cover it wait til the marinated soy sauce and vinegar lower or in tagalog bumaba. Then add 1/2 cup water and add brown sugar.. then simmer til the level of water lowered or in tagalog lumiit ang tubig.. Note: no oil needed cause pork has its own oil

Each and every Filipino has their own unique versions of Adobo, but it mainly locks into the ingredients and methods of how it's cooked. the closeness and accuracy of how it's done its what makes the recipe unique and eye-catching by many of those who want to eat it.

Adobo is a special dish in filipino. Back then, Filipina used to cook adobo to give them to the man that they love that's why adobo has different techniques and recipes to cook with. It is a way of expressing feelings towards the one you love.

i put 1 cup of shoyu (what people say as 'soy sauce') with 1/2 cup of vinegar..that was too much vinegar, but that's because there are so many variations...really, just need : garlic, shoyu, vinegar and bay leaves...anything else is extras... aloha !

vinegar to soy sauce ratio is 2 is to 1. you have to simmer the meat in low heat which will help evaporate the acidity of the vinegar before adding the water and the marinade. adding whole peppercorns at the end would add depth to the flavor. great job.

the authentic adobo is meat (chicken, pork, beef or vegetable) cooked in soy sauce, vinegar, onion and garlic, as simple as that. I include veggies because you can cooked adobo beggie such as sitaw (string beans), kangkong (water spinach), you can also do fish adobo

Also try pork belly adobo with hard boiled egg. When you cook another adobo, Try frying the meat or chicken a little bit when it becomes tender. Then simmer it again into its sauce until the sauce reduce. On the same pan, cook fried rice. 😊 And also try SILOG meals. 😊😊😊

nice vlog .. im definitely hungry .. i will gonna cook adobo right away now . haha😍 And yes , they're are variations of adobo. The usual adobo here in phils uses red onion and some potatoes along with the meat . some add also sugar , some just okay with just the vinegar and soysauce mixture . there is also dish that uses that white onions and chopped in rings .. and its called "Bistek" (비스탴) , tagalog word for Beefsteak , its the same look as the Adobo but instead of vinegar , we put Calamansi . and it also can be cooked with pork .. its like the sister dish of adobo..😊 anyways .. nice video tho. thanks for enjoying our famous Filipino adobo recipe .😍😍😍

Jessica, the ratio of soy sauce to vinegar should be 1:1 So if you put 1/2 cup soy sauce, then put only 1/2 cup vinegar as well. Also add brown sugar and lots & lots of garlic. A squirt of oyster sauce & a sprinkling of magic sarap seasoning will bring it to another level. The longer you simmer & reduce (at least 50 mins, even an hour) the better. Stir & toss every now throughout the process.

Some people also put a little sugar or pineapple in their adobo specially if the pork is so fatty and if you dont want to eat your adobo with rice, toss in some potatoes in it. The rice and the potatoes keeps the saltiness of the soy sauce balance. Nice vid. Your adobo made me hungry😅

You can sautè the pork with garlic and onions without oil because pork has too much fats. You can put vinegar as much as you want the taste along with the soy sauce. And here in bacolod because actually im from bacolod we put sugar. You can try that one. I always enjoy your vlogs. Youre so beautiful. ;)

You can add more soy sauce if you want. its a preference for me I prefer it tasting more on the soy side but you still taste the sourness from the vinegar. for variation some people add potatoes cut in half or in 4 pieces depending on the size. onions can also be cut by rings but usually its diced.

my style of adobo i fry the chicken/pork... then put mince garlic.. then in a cup i mixed soysauce, oyster sauce, and 2 tea spoon of sugar ( i like a lil' sweet) and a little water (to make it less salty and more saucy.. hehe)...simmer.... then ground pepper and leaves...simmer...i slowly mix the vinegar..by adding a table/tea spoon.. one at a time... until it catches your preferred taste. :)

My chicken adobo is cooked with patience and love. I marinate it to calamansi juice, garlic, onion and soy sauce for 12 hrs. Then i fry them just right. Once the juice that it absorbed from being marinated sizzle and come out while frying in the pan, i will start pouring in vinegar (just minimal coz it already got calamansi) with gentleness along with Ed Sheeran song. Then I'll start to mix the juice (soy sauce garlic, calamansi and onions) from where the chicken was marinated along with bay leaves. Unfortunately, my neighbors are already waiting outside my door to get their share so i dont get to eat too much of the fruit of my labor.

You can add Pineapple to make it a little sweet. Bell pepper to improve it's aroma, and a green chili pepper to make it a little spicy. These ingrediants can balance the sourness and oil of Adobo. A fan of yours here. Fighting!

@iamrjv

You should not add soy sauce because the vinegar will just evaporate itselt and will blend well with the soy sauce eventually. When we cook adobo we mix the soy sauce and vinegar already with the pork and then let it simmer. In about 8 to 10 minutes, that's the time that we will add water and pepper leaves, this is needed to make the pork tender and the water will just evaporate and blend with the soy sauce and vinegar mix. Then after another 10 to 15 mins add salt and pepper to taste and simmer it for about 5 mins and you're done :)

for me, only reason to put oil on it is to fry the pork a little before simmering, if not do not put oil, 1 bay leaf is enough, less to no salt because soy sauce is salty. add a pinch of sugar

Actually original adobo is not marinated you will just sauté the spices and meat and add the soy sauce & vinegar and let it simmer for several minutes. One cup of vinegar is too much, you can put just 1/3 or half cup because i noticed, if I'm not mistaken you have less than a kilo meat. You should've added at less 1 table spoon of sugar to balance the acidity and saltiness. I did not also seen that you put black pepper, it is also an essential spice for adobo.

Im a college student and i cook sometimes but mostly buy haha since no time & i have to study at the same time living in dormitory so got no one to depend but myself. Now i focus on fish cuisines for a change. I always cook chicken adobo since i love chicken all parts of it haha. But in adobo pork is much delicious. And in role play SISA symbolizes the Philippines my professor told us back then, when her 2 children crispin and basilio went missing she was worried sick for them. She's like PH who's beautiful pearl where the colonizers abuse, became worriedly sick and crazy. Thats the way how Jose Rizal saw the philippines era at the time of spaniards rule of PH. We also dramatized that but we had draw lots and i draw the Noli Me tangere and i draw Elias role haha.

Hi miss jessica. Please try ilonggo version of it. Here in iloilo we put atsuete oil to make it more appealing because of the color, a little ginger and lemon grass (if we cook a native chicken to eliminate the slimy smell of the chicken). If you like mang inasal barbeque, then you may like it because it originated from iloilo. Mang inasal barbeque has ginger, lemongrass in its marinade and atsuete oil as finishing sauce in the barbeque.

next time, don't put too much oil when cooking pork adobo. The pork has it's own oil that comes out when cooking. When I cooked adobo, I don't put too much vinegar coz i get sour stomach later in the day... When it gets salty, ( because you added salt & soy sauce which makes the food salty ) add a little bit of sugar to it. I sometimes add lemon grass to make the adobo smell really good when done cooking. BTW: you can also try beef adobo. I made it many times. If you ever try the beef, make sure the beef is thinly cut (like steak). Beef takes longer to cook than pork or chicken. when thinly cut, it makes the meat cook faster.

Soy sauce is salty in itself so no need to put salt anymore. If you put onion rings in adobo it would look like pork steak. Original adobo doesn't have onions. I have to commend you on your English. Very fluent indeed :)

Have you tried adobo kangkong? It's my favorite. And Jessica do you know any Korean or Filipino vegetarians? When I'm in the Philippines I'm eating a lot of bihon and vegetables.

Is it just me or you look like yeonwoo of momoland? 😍 your eyes are sooooo ❤️ You can add brown sugar or palm sugar too to balance out the saltness and sourness and also you can add hard boiled egg while youre simmering it,itll absorb the flavor 😉☺️

You have to estimate your salt and vinegar and taste it to your satisfaction. You do not add oil at all to simmer it because pork produces oil. You put too much minced garlic, a tablespoon is just enough.

You let the vinegar sit for a few minutes without stirring, It takes time to let the sourness mellow (re: the time when you tried it and just tasted vinegar). Neways, cute vid XD

only 3-4 tablespoon of vinegar is enough! having a cup of vinegar is too much! you can add also a half of tablespoon of sugar in it if you want to make it sweetier and it will have a different variation! most teeners like you love a sweetened one!

I recommend to put a little bit of brown sugar in the adobo it adds a little bit of sweetness to the savory adobo!
