Freezing the cakes for a few hours helps with crumbs and keeping the frosting COLD until needed also helps. And give the cakes a quick skim frosting layer and then refrigerate again for a few hours and then a final frosting layer. Done. Nice job Jamie. Beautiful cake.

Yay!!! Great job! The frosting bit at the end is always so troublesome. But I think the cake looks perfect! I'd really like you to do an episode where you revisit some past fails now that you're more experienced.

Could make trifle with future spare sponge bits. Colourful crumbs on the top looked fab. Whole thing took a lot of effort and patience. And, yes, the colours really popped.

7:42 in Germany most bakeries use left overs from cakes and make "Granatsplitter". That is, a bisquit cookie as base, then the left-over cake(s) get(s) crumbled up and mixed with some other ingredients and placed onto the cookie, like a little spikey mountain, and finally coated with some chocolate. Always a surprise what you get when you buy one. Keywords for the search: Granatsplitter Kuchen. Easy to follow, even if you don't speak German ;)

You have been teaching yourself all this; very impressive I would say as I was trained in the field and I sense that you have taken on this as a life challenge mostly in the skill of baking but also in "PATIENCE". i THINK many of my days/years spent making wedding cakes and also studying Julia Child would have been somewhat better if I had your sense of humour(brilliant) I agree with your substiition theories...I have also used some British ingredients ...did you invest in butter on stock market yet; wishing I had 35 yrs ago...lol ♥

That turned out great! Icing a cake for a smooth finish takes practice but using the right tools help. Using a long offset spatula is what’s needed- something the same height or taller. It was still a very presentable cake.

A trick to reduce the crumbs on the icing is to place a glob of frosting on the cake and “push” it over the cake, rather than drag the spatula across it. It helps. But your cake looks really good! Pretty decent job!

I think it would be great to be Jamie's neighbor. Imagine you're Netflix & chilling at home (literally) and there's a knock on your door and it's Jamie holding a rainbow cake saying "Hey, I just wrapped another video but this cake is a tank and we can't finish it. Would you like it?" Next night, "Hey we made Julia Child's lobster thermidor & it can feed an army. Want some?" And so on. I'd wind up weighing 400 kg while he'd stay thin.

Yeah, should have watched this video first. In any case, you can use a metal offset spatula to smooth your buttercream. Heat the spatula over the stove. I’ve seen this method repeatedly in cake videos. Love your McGuyver cake turntable!

You getting better and better each time! When will you get a proper stand mixer? Someone like skill share should buddy up with you! About the left over cake you can make truffles out of those. That's what Christina Tosi does. She's got a recipe for cake truffles made out of those left over cakes.

So I looked into that before I started. The recipe I was following had self raising flour, but then I did some sloppy research and found I could just use AP flour. I’m probably 100% wrong on that and maybe that explains how dense the cake was?

Did those cakes even rise? Flatest thinnest cake layers for so much effort. I'm to the point where every video I watch I wonder "is he trying to be incredibly messy and sloppy on purpose? Does he really not know how to Google how to use a kitchen tool properly without fling food everywhere?" Honestly don't know but I'm glad I taught my nephews cooking and baking terms as I taught them to cook and bake ss children. I am.happy that thus far everything Jaime has made has been edible and he's been deeply satisfied with the final product.
