To clear some doubts, they aren’t animals, their quirk is being animals, like the police chief has the quirk to be a dog because he has a mutant quirk, for example, tokoyami has a bird head because someone in his family had a mutation that made them have a bird head, other examples of mutants are Tsu or koda, who are humanoid but not quite, in the case of the principal he is an actual animal that somehow developed a quirk, he is the only animal with a quirk in this universe.

Aizawa's quirk works to any amount of people just as long as he saw them, they remain in the range of sight and he doesn't blink. That's why he could erase multiple people's quirks in USJ. The equipment he used in his eyes also works so that the enemy wouldn't know who's quirk he is erasing.
