Usually when someone cooks over direct fire, the food or vessel is elevated. The flames lick the bottom but aren't in full contact. Like a BBQ. 😊

I live in the province and I've tried cooking over open fire, even frying. The thing is, you have to keep your eye on the food while frying. Once it doesn't stick, you flip it. Then flip again until it reaches your desired state. Another thing is, we prop up metal stands or rocks where we place our skillet or cooking ware. The reason is we take out firewood or add them, based on the need of our dish. If the fire is too big, we take out firewood. If the flame is dying out in the middle of cooking, we add firewood then fan it or blow on it to get the fire going again. Also, make sure your firewood doesn't have much moisture (not freshly cut fromna tree especially) so it doesn't smoke too much.

I would recommend put dish soap on the outside of the pan so you can take of that burnt stuff that can form on the bottom of the pan
