Hi. I am a nutrition student who also has an autoimmune disease. You may already know this, but just in case you didn't or one of your viewers doesn't, I just want to state that the Mediterranean diet actually refers to an eating pattern that is based off of what researchers observed being consumed in the Mediterranean after doing a very famous study known as the "7 Countries Study." A Mediterranean eating pattern typically exhibits the following qualities: 1) It's high in things like whole fruits, vegetables, including legumes, grains, and nuts & seeds; 2) The primary fat used is olive oil, which is high in monounsaturated fat. (When people talk about healthy fats, monounsaturated fat is one of the fats they are referring to. If you want to incorporate a neutral cooking oil into your repertoire in addition to olive oil, avocado oil is also rich in monounsaturated fat and has shown some promise when it comes to research related to inflammation.); 3) It includes a low to moderate amount of animal protein, such as eggs, poultry, and fish. (Red meat is consumed less frequently than other animal proteins; think like once a month, if at all.); 4) Sweets, or foods with added sugars, are limited. (Think like a weekly treat or so.), & 5) Cheese and yogurt are eaten in moderation. (Note: While yogurt and cheese can be included as a part of the Mediterranean diet, I think it's also important to know that dairy products can trigger symptoms in some people with autoimmune disease. I think one of the key takeaways from this aspect of the eating pattern is the importance of consuming foods rich in probiotics/calcium, and these don't have to be dairy-based. Additionally, the original eating pattern also discussed consuming wine in moderation, but we are starting to see that no amount of alcohol may actually be safe. Alcohol is considered to be a toxin. Fresh berries and the fruits that wines are typically made from already contain phytochemicals, or "plant chemicals," that may offer health benefits.) The elements of this eating pattern can also be applied to other cuisines as well, such as Korean Food, Soul Food, Mexican Food, etc. While eating cuisines that originated in the Mediterranean can be an enjoyable experience, just know that you do not need to limit yourself to these cuisines. Also note that some people with autoimmune disease may report reacting to certain foods, or certain foods may trigger their autoimmune disease symptoms, such as products made from cows' milk, and/or certain nightshade vegetables, legumes, nuts and seeds, and grains, especially those containing gluten. It might benefit some people to work with a dietitian to help figure out which foods trigger their symptoms, as this may involve the person eliminating certain foods/categories from their diet and then adding them back in and documenting how their body reacts to each food. A dietitian can make sure that you are still meeting your nutrient needs during this process. Lastly, the way in which you prepare food also matters. For example, fried foods tend to be associated with increased inflammation. And soaking and rinsing legumes may help reduce compounds in them that certain people may be sensitive to. Sorry for writing so much, but diet seems to be really important when it comes to dealing with an autoimmune disease, so I just wanted to share a bit of information. I follow a slightly modified Mediterranean eating pattern myself. I hope this was helpful.

I’m a registered dietitian and I highly recommend speaking to one. I work with a very diverse patient population and it’s important to acknowledge that nutrition tells us “Eurocentric” cuisines (like Italian) are seen as the “standard for health” which make it sound superior when it’s rooted in racism. No one wants to be told their cultural foods aren’t valid or aren’t healthy. There are many patterns of eating that can be health promoting. I’m Italian and I can tell you we eat many things that people wouldn’t consider healthy. For the nutrition student, while nutrition is important, it’s essential to recognize there are social determinants of health that contribute to health, and nutrition is only a very small factor that doesn’t always improve someone’s health. People in these countries might live longer due to genetics, less stress, healthcare and so much more.

Im Lebanese and I'd like to thank you for trying our food. First, the meat shawarma is best with the tahini sauce, onions, tomatoes and pickles. I prefer the chicken shawarma sandwich. If you like falafel, try the falafel sandwich 🤤. In regards to the kabob platter, that looked soooooo good! The yellow color is from the spice turmeric. I recommend you try the chicken kabob dipped in the garlic sauce.. that is bomb! The maamoul looked good, I recommend the walnut one. Finally, the yogurt drink, that is an aquired taste, I don't like it much either 😂. Good luck on your Mediterranean diet quest. ❤

When I see that yogurt drink and when you guys describe it being salty the only thing that comes to my mind is a Laban, which is supposed to be salty it is usually drank while eating meals because it helps to digest properly. It's like a probiotic drink. It's excellent and I do recommend everyone to try it at least once, it made me so happy to actually have you guys try my favorite childhood drink.

Best wishes and Prayers for Matt's health. Glory, watching Eric Berg, Ken Berry, and especially Robert Lustig helped me learn so much about nutrition and improve my health. The reason that diets like the Mediterranean diet, the keto diet, the Paleo diet, and the vegan diet all have great results helping people improve their health is because it forces the majority of the diet to be whole, unprocessed foods. As long as the focus is on whole unprocessed foods, I bet Matt's MS can stay in remission. I only say this because I feel like a lot of people set themselves up for failure when trying to be too restrictive with a new diet. That's why I find following simple rules like keeping 90% of the diet whole foods to be so incredibly helpful. Blessings to you and your family.

It's just alot of prep time to make certain meals, but worth it in the end to lavish your taste buds and enjoy.. Glad you liked the foods Glory picked out..
