This was so cute….. I can identify with Tom. I’m a Westerner, my husband is Ghanaian. I went to visit his Sister in the States….She threw me a small welcome party, and decided to make Fufu and a stew. Wanting to be helpful, I went about “ setting the table” with knife and fork of course…..Everyone had a good laugh as my sister in law explained…….”You don’t eat Fufu with knife and fork”!! Married almost fifty years, we now travel to West Africa regularly for our Missions Ministry. I still eat my African dishes with cutlery

Hi Joy. I am a coastal lady from Mombasa. I normally soak my omena with warm water for five minutes. Then proceed to wash it with warm water until it looks silver-like in colour. On the last step of washing I usually use cold or room-temperature-water, then strain the water. 2. Pan dry the omena on medium heat. 3. Shallow fry the omenas until they are almost brown, then I add sliced onions, freshly crashed (in pestle and mortar) ginger and garlic and a pinch of salt until the omena are golden brown and crispy. 4. I prepare tomato stew full of spices and herbs as per my preference. 5. Serve with soft warm- hot sima (ugali). In other words, I do not cook omena and tomato stew in one pan. I feel like tomatoes and other spices weaken the aroma of crispy fried omena. (My opinion and observation).

Or just fry in soup until its brown and add any coating. For Sadza (Ugali) we boil water then mix cold water and mealie meal (maize flour) aside just a little and add to the boiling water and stir until its like porridge then leave it cooking for some minutes then add mealie meal as required but don't make it hard. serve as you want.

I love your family, down to earth, happy, lovely and very cooperative. Joy I like how you're keeping our Kenyan delicacies over there. You make me long for omena soo bad. Where do you get your omena from? I am nyaugenya, in Australia. I like the way you cook the omena - it's exactly the same way I do it. Tom, you're such an awesome down to earth husband, very supportive. Such a wonderful family! I love your daughter too, she's soo pretty.

Joy and Tom, you have made me salivate. That was so delicious a meal, omena is so good for Joy in her condition. In deed you're a good cook Joy, thumbs up to your dear mum for teaching you how to cook. Tom is equally great in the kitchen, I was shocked how he skillfully turned the food in the pan without pouring it out. Keep it up Wuon Atieno and Min Atieno.

I'm from Kenya, but my community don't partake of the "omena" so I have never tasted it, we eat mostly Millet ugali. You made it look mouthwatering and now I have to look for where to buy this fish in Texas.

Oh I love this.the omena we call it matemba in my country. I also fry them like that as well . And Sometimes I soak it in water before cooking to make it a bit soft . Otherwise its really nice.

Nice video Min and woun Atieno. Lol my middle name is Atieno. I always add some creamy milk to the omena before the dhania, tastes yummy(almost like beaf) and also does away with the after taste. And some pilipili😋😋

my son loves silver fish but he hates the flower just like his English dad. being from Portugal small fish is deep fried and served with tomato onion. my Angolan side adds baked sweet potato and boiled cassava. I love your recipe. Tom made an amazing job tossing and smashing that fish down. first time here, enjoyed it fully. thanks

I don't think South Africans generally eat silver fish (I could be wrong), but I've seen it in foreign nationals' shops who are from other African countries here in South Africa. It has a very strong smell and it's always displayed to dry without being covered in these shops so I didn't see it as appetizing at all but the way you've prepared it looks delicious.
