STEP UP: BIRRIA YAKI-ONIGIRI. Add a cornstarch/potato starch slurry to the consomme to thicken it up. When adding the birria filling to the riceball, add a little bit of shredded cheese inside too. Guga I suggest to you that you start watching an anime called shokugeki no soma or in english is called Food Wars. The food experiments that the main character creates are incredible and you should try them. For example, he creates this explosive pearls but infused of kombu dashi that as you know is one of the foods with the most umami of the world for its content monosodium glutamate. And that's just one example. I'll be expecting your videos based on this show.

Yuzu fruit is amazing! Its like a mix a lime, lemon and an orange. In Japan they make a paste of Yuzu and pepper (Yuzukosho) and there is nothing that is not made better by adding it... meat, bicycles, couches everything becomes delicious

A little tartness just does wonders for fatty meats. A lemon-garlic or lemon-herb compound butter is always in my fridge and frequently on my steaks and some fish, and I cannot recommend it enough.

but if you're curious about this then i can recommend an experiment. cook a beef bone broth and then form it into balls with Sodium alginate and calcium lactate, this is how you make those little squishy pearls. and then use them on your steak. those would be umami bombs that are way better suited for your steak and you have the advantage that they don't overpower the steak, when you take too many. you could also try butter pearls if this is possible, or other flavors that go well with steak. and if you like it enough, maybe in your future experiemnts instead of a compound butter you can just make a fourth variant with compound pearls

We have Finger Limes (aka caviar like) here in Australia which I regularly use in place of sauces. They are smaller pearls so it's not an overwhelming burst of lime and they come in a range of colours

I made those pearls with orange juice and with pomegranate juice and used a combination of them as a yogurt topper as a dessert for a dinner party I threw. Big hit, and they're honestly pretty easy to make for the most part. With lemon juice they're next to impossible without some finagling, tho.

THE BEST marinade is wasabi and soy mixed together. Roughly a 1 to 5 (up to) 1 to 10 mixture depending on your sensitivity. You will not be disappointed

I bought your cook book to try and find the dish I made once and it wasn’t on there .. idk if u did it as a side dish or main dish but it was chicken with red sauce and added table cream it had rice as well I don’t think it was tikka masala because either your description or pinned comment had said the culture this dish is from would lose their minds for doing such thing and you did something that wasn’t traditional but was how you liked it
