Since you seem to really like sustainability, I totally recommend using old one sided papers! they can be like old class papers with writing on only one side and all you have to do is flip it over, punch some holes in it, and thread it with some ribbon! When you're done with it you can obviously recycle it OR you can put it in water, mix it, and then use a flat strainer and let it dry (you can also use rocks to make dye so you can make aesthetic little pages)!!!
