Baking jollof is a method I mostly employ when I'm throwing parties or catering for an event. Very easy way of getting your jollof to be perfectly cooked. If you're looking for a very popping platter of jollof, then this is the recipe foe you!
Ingredients:
4 cups basmati rice
About 2 cups tomato stew
3.5 lb mutton
1 sprig of rosemary
2 sprigs thyme
1/2 teaspoon black pepper
1/2 teaspoon white pepper,
1 teaspoon curry powder
1 Maggi shrimp tablet
3 bay leaves
3 tablespoons of my all purpose seasoning
salt to taste
** I baked this at 350°F for 1 hour 20 total. **
