Could you tell us more about the curry powder you use? Is this the standard Western curry powder mix? Or is there a West African curry powder mix that you would recommend? The reason I ask is that I already make my own curry mixes depending on which cuisine I'm cooking. For instance, I have a Chinese five-spice mixture and my own homemade garam masala for Indian dishes. For Thai and Indonesian dishes, I make them from scratch each time (since those cuisines start with a curry paste instead of a powder.) Thanks for what you do. I'm happy to be learning from you.
