This made me a fan of Remi. I’ve been a cook for over twenty years and just jaded with most of the pop chef culture. So it was nice to hear a conversation that wasn’t pompous about the art but got across the dedication and skill put in. Thanks for making me aware of him.

I love his take on restaurants. I worked a few years in a restaurant and it was brutal. Long hours, hot kitchen, worked many many shifts with zero breaks, and all for near minimum wage. I loved the people I worked with, the job gave me a love for cooking, but I don't ever want to work in a kitchen ever again. Without a doubt the most stressful job I've ever had.

Fun fact about Julia Child since she was mentioned! Prior to becoming the world famous cook/chef is was known to be Julia child worked for the OSS (spy agency the United States used before the CIA was created) during World War 2 as a research assistant. Julia Child, and her team helped developed a recipe for a gel like substance to be used as shark repellent on things like downed pilots rafts, and other things like torpedos/mines. That’s also where she met her husband who convenience her to write her cooking books later in life.. That shark repellent recipe is one of her “first recipes” she said, and one of her most important. TLDR : she worked for a spy agency during WW2.
