The term troubadour was actually used even as far back as medieval times. They were composers and performers of poetry as far back as 1100.

The line "Sometimes I feel like Jessie James, still trying to make a name" is my favorite in the song. Having met, and spent a small amount of time with him, I can attest to his humble nature. And this line accurately describes him. Even after 60 #1 hits, a successful 30+ year career, and being loved by millions of fans, George absolutely would sometimes feel that his efforts may have been inadequate, or that he could have done more. One of my favorite songs by him.

My favorite George Strait song. Troubadour was an entertainer that use to travel ( not much different then now ) the country, usually to castles and wealth homes to sing , recite poetry. Anything to make a living. Gitano here is a very old one. Tex Ritter Deck of Cards, it's a story song

1988 my parents couldn't find a babysitter....George was playing at old roller rink in Denver, CO. So they took me, I was 6...we were seated second row from the stage. I knew every lyric to every song he sang. Behind us, there a group of young women, 20s, crazy about George (and I don't blame them one bit) They had flowers for him...but he kept smiling and waving at me....so the women gave me a flower to give to George. My father lifted me up to the stage to give it to him...he smiled put a guitar pic in my hand and said "don't let anyone take this from you darlin". This is one of my fondest memories as a child. I will love George forever!!!!

He's talking about the life of a traveling singer, on the grind starting out playing honkytonks every night and basically being a badass breaking in the game. And the point he's making is he's an OG now, he's aged but when he's in his bag on the stage, he still feels like he's 25 and stirring shit up. And in fact he's always going to be that guy at heart.
