Phyllis puts me in the mind of someone I wish I had met. Honestly I just crawled out from under a rock a found her and Mr. Bucky in the late 2 weeks which means I also learned they're both with God now. She is so soothing and comforting like an old friend. RIP to you both and im sure I speak for the majority, thank goodness for her videos. Kinda feel like someone I loved passed away and never knew her. My mom died in 2014 from cancer and it hurts my heart to hear Phyllis speak of her unbearable pain. 😢❤

I am a new cook. I happened to see you on You Tube and I was hooked. I have watched MANY people's cooking shows but when I saw your's....you are my go to!!!! You make it seem so easy and you show products which many of us new cooks need and love to see. When I cook with you I feel like I'm cooking with my mom. Phyllis, I adore you!! my husband does too....he'll ask, are we having Phyllis food tonight? lol Someone else commented about your voice, and I wanted to say that I find you SO calming.....some folks speak in such excited tones that sometimes it can be annoying. I feel like I'm with an old friend when I watch your videos. I've made several of your recipes now and my favorite is your Milk Chocolate Cake.....very simple and easy yet absolutely delicious! thank you for sharing your life. Oh, and before I forget, I wanted to say I LOVED your videos where you talk about 50's food and life. I'd LOVE it if you did more video stories like that again. I think a lot of us long for that simpler time. Anyway, my question was about frying......I've never fried like this and what I don't know is What do you do with all the used oil? Can you re-use oil? Do you store it in the fridge? thank you again Phyllis for taking the time to share your life with us.

Thanks for your comment. I reuse the oil and usually just leave it in the fryer if I'm planning to use it again soon. When I fry spring rolls the oil can't really be used for anything else because of the strong taste left in the oil. The "Fry Daddy" doesn't use much oil so it's discarded after about 3 uses.

It is such a simple stroke of genius to fry the chicken outside of the kitchen. I cannot believe it has never occurred to me to use a deep fryer elsewhere than my countertop. From now on I will be using it on my back porch, thereby avoiding all the grease splatters, odors, and smoke that comes with the cooking process. The recipe itself looks and sounds fantastic. Thanks for the upload.

Hi Phyllis, this looks delicious ! I am now retired, and it is amazing how one can stretch a budget with a little effort...and meat is one of hose things that can be ....all these chicken nuggets made from one breast....would be enough for 2-3 meals for just me. I will cook a Turkey for Thanksgiving, and divide into portions to freeze....will have many meals in the weeks to come. Great video Phyllis !! Also thanks for sharing Peppie and Steele with us. 18 yrs. is a blessing to still have your Peppie. My sister had a white poodle that she named Pepe sweet dog our dog is larger he's around 68 pounds somebody dumped him in our neighborhood and we were blessed to have him come into our life 16 years ago. Bubba Bear is his name. Of course being a larger dog he does have some health issues with his hips and memory but we take it day by day. He eats two small meals a day,we go for walks so everything is fine so far. Sending Gods Blessings to you & Your family.

Oh, I'm definitely going to try this, and I'll be doing the frying on the screen porch. Like you, I don't care for the "after smell" in the house. I love the little tips you give as much as the recipes. Like putting the chicken in the fridge after coating it. I've been cooking for many years, even cooking the Wednesday night supper at our church for 12 years.....and I never heard of doing this. Thank you so much for all the great info!!!!

I love your videos Phyllis! The reason I started watching your videos was I went to high school with a Phyllis Stokes and I wanted to see if it was her. I am glad it was you! Your videos are so interesting and I am learning a lot about cooking. I have tried your tip about breaking eggs on the side of the bowl instead of the rim to avoid pieces of shell in the egg. I forgot to tell you your recipe worked out very well, I make it whenever my gang asks for fried chicken now. the first time I had to make SUBSTITUTE self rising flour and substitute buttermilk, and it worked just fine.

I love the idea of using the ziplock bag. So easy! I'm gonna have to give that a try. Thank you for the tip. That rice looks so good too & I love sweet potato but my husband doesn't. His family had a sweet potato farm when he was a kid so he was made to eat them way too much & he developed an aversion to them and oatmeal. Anyway, I'm going to give your recipes a try.

French fry seasoning from big lots makes excellent chicken stripes and nuggets. I use an egg with a little water sprinkle a good amount seasoning in the egg mixture and beat. Then I flour the chicken, dip in the egg, dip again in the flour and fry and it is delicious.

I don't know what it is about buttermilk but I soak pieces of fish fillets (usually cod) in it with lime zest garlic and siracha before frying and it just really beefs up the flavor and I do my chicken tenders similar to your method just that I use garlic onion powder s/p...I usually will soak the chicken pieces overnight in the seasoned buttermilk and the fish 2-4 hours

Hi Phyllis I I hope you n Mr. Bucky are well. I know you rarely fried chicken ( bone in) if I understand it correctly. I hope after reading this you will consider doing a video tutorial on how you do it. I have read and read fried chicken recipes and watched certain ppl on KZbin but, when I try it, it just doesn’t turn out. Last recipe called for me to fill a fry pan half way.... well... it was a humilifying adventure for me to say the least n Lol... I really do not want to talk about it.... after trying and trying to do it like they did back in the 30’s , 40’s or 50’s.... a great grandmas southern fried chicken... that’s what I want to accomplish, and I haven’t yet. It’s not so much the ingredients, it’s my method. I don’t know the old style way; is it a pan half full of oil? is it a deep fryer? Is it a fry pan not so full of oil? Does it cook 15 minutes total only when totally submerged? What is the right temp? Should I use lard? And the questions just go on & on and I have not mastered it yet ... not in the least. So... will you do a video tutorial on how you and your mom & grandma did it. Please? Thank you. - Susie. ( My favorite chain of the fried chicken market is Churches Fried chicken - I don’t know if they are in the south - it’s kind of a hint to you as to what I want to be able to accomplish fyi)

There is a wonderful seasoned flour that does have the same seasonings as KFC called Kentucky Colonel. It's Available in the south mainly. It gives off wonderful flavors too. With your spices I bet it would send that chicken over the edge! :)

Into the fridge after flour coated, excellent tip! I also was reading to add corn startch to the flour mixture to aid the adherence and crispiness of the coating. Any thoughts...?
