Hi, Since the 14th of March, my website dropped dramatically to zero rankings for all pages, we usually have thousands of visitors per month. I did some technical SEO details, everything was good, but until now I can't fix it. Do you have any idea about this issue?

Yes it's because of the March Google Update. Thousands (if not millions) of sites got hit the same way, primarily content only sites like blogs and affiliate sites. As of right now I do not know of a reliable way of recovery.

Does this work for shopping ads ?

Organic + Paid for shopping yes but how you approach it will be different because you can't exactly target keywords the same with shopping ads.
