These doughs are made using the spelt and sweet potato master recipe loaf recipe from my new book... I used this recipe in a mass group bake this weekend but having recorded the doughs and outcome I thought I’d share it here too..

We can hear the bubbles when you turn the dough, sounds lovely. Glorious loaves as usual. I really doubt there would ever be another starter in the world like yours. I love your recipes and the easy way of preparing them. Now, finally, I have also ordered your book - I am really looking forward to my first attempts at baking it up. In Austria we have completely different flours - what do you think I should pay particular attention to in order to be able to successfully bake your recipes?

Hi Elaine, I am enjoying trying out your recipes from the book. Have made some wonderful loaves. How would you scale up the Almond Raisin and Spelt Baby Master? Made it today and it's wonderful. I also added a handful of toasted sliced almonds. Greetings from Ontario Canada!

So. Are these pans 5 and 3 quart pans? It’s hard to order a “big” or “little” pan on amazon. Lol.

The large one I use is 26cm diameter, the smaller one is 20cm. We don’t use quart measurements here

@@foodbodSourdough . Thank you. Perhaps it would help more to know how many cm deep. I make your master recipe in cast iron now but in my 70’s that’s becoming too heavy to take out of the oven. The bread turns out beautiful every time.

@@twinfin8571 if you look up Falcon enamel pans these diameters are standard sizes with only one possible depth. They tend to be around 12-13cm deep with the lid on. In the US a granite ware pans are the best alternative.

@@foodbodSourdough thanks again. I think the granite is the one I looked at but I’ll check out your other suggestion. I haven’t had any problems following your recipe and everything turns out very delicious. But my old, large, hot cast iron is no longer a good idea for me to lift from the oven anymore. It’ll be fine for stovetop or something that can sit in it till it cools down.
