When you dry fresh ginger, then you grind it, you get ginger powder. If you dry red capsicum, then grind it, you get paprika. If you cook chicken mixed with a few vegetables, dry then grind the mixture, you get chicken masala. You grind cinnamon sticks to get cinnamon powder. Black pepper cones to get black pepper, etc. If you think spices are chemicals and they'll give you cancer, show up with your chemicals and i show up with my plants. It's not a must depends with the food you want to cook and maybe you want some aroma in it,and there are also natural spices...you can always skip if you don't want to 😊

You could get from supermarkets.Most markets have a spice person, kwenye you buy your groceries.For me i go to wangige market huku kabete, there is a guy who sells all sorts of spices, and i have similar jars i use. Its cheaper juu wanapima from 20/40 bob, whatever your budget is you can get spices
