I have a very similar truck, 2018 version of this one. I carry most of the same stuff that you have, but I also carry a portable titanium wood stove. I have a cap on the back of my truck and I have a sleeping pad and winter sleeping bag in there, along with some food and clothing because I frequently travel remote forest service roads. For that reason, I have a Garmin InReach that I keep with me when I leave town. The sleeping bag and wood stove might sound excessive, but I live in a province that is 50% larger than Texas in area, but has 1/5th of the population and 80% of those people live within five hours of the US border, so the rest of the province is just mountains and trees.

The seat belt cutter is a great thing to have, but it won't do you any good if you can't find it. Make sure it is secured, so it doesn't fly all over the truck if you get in an accident.
