I didn't want to cook in this heat. I had leftover mashed potatoes 2.0, chicken bone broth and extra sharp cheddar cheese. I made a super fast potato cheddar chicken bacon soup. Man, so good. Those carnivore mashed potatoes 2.0 worked perfect in this. ❤❤

I've never made a chuck roast into a roast before. I'd always take cuts about that thick, season them with salt, pepper, garlic powder, cumin, chili powder and a little smoked paprika and then smoke them to rare and then sear them off to give them a crust and bring it up to medium rare - slice thin and serve with chimichuri sauce. All that said - looking forward to trying it this way - looks awesome.

You could definitely do that. If you’re looking for a traditional pot roast you’re probably looking at 180F for about 24 hours. 😊👍🏼

Have you ever tried reverse searing a roast? More of a thing for roasts you want to cook rare or medium rare and slice than roasts you're going to shred, so maybe not relevant for this style of chuck roast. I've been doing this lately for cooking low and slow in the oven (150°-200°) then let rest, then sear.

Haha I understand. If it helps you would never know there’s horseradish in this. The long cook removes the heat and the pungent flavor and it blends in to offer a subtle deep rich flavor that I don’t think anyone would ever identify as horseradish just by tasting. 😊👍🏼
