@@iSharpen Pleasure Baz! At almost 50 years of age, I still want to learn new things and your vids have helped me immensely. Having crappy dull knives in the kitchen has always bothered me, and having bought quite a few rubbish pull through knife sharpeners and other gadgets, I have now had enough. Sure, the T-8 is expensive, but I will always be able to sharpen my stuff, for the rest of my life. Buy once, cry once rather than buy cheap, buy twice. Assuming I get fairly good at this (when my t-8 arrives next week), I think I will offer to do all the neighbours knives for free, just for some practice :)
@iSharpenАй бұрын
@@loiphin "Expensive" is relative not definitive. If you buy it as a hobby it's much cheaper than many hobbies like boating, drag racing, hot rodding, travelling, collecting...the list is endless of the things a T8 is cheaper than. If you flip the switch to "investment" it can make you some excellent spare cash once you decide to sharpen a few knives on the side, either for friends or at the local market or for local restaurants, chefs, butchers, catering companies. The sell is easier and instant. "Sharp knives are safer and a joy to use". It can be done in your spare time or full time (like I'm doing). I can sharpen about 400+ knives from one wheel. Just using up one wheel can double your initial investment and that's impressive for any business investment. There is literally no downside to owning a Tormek T8. It's a pleasure to own and a gift for your workshop that will last you a lifetime. How many times in your life can you get to own the best of something? Also, keep in mind that I bought my first T8 for about $650 and it came with over $1,000 worth of jigs and accessories. My second machine only cost me $850 and it came with jigs that I've since sold for $750 and it came with a brand new wheel worth $425 so it's essentially cost me nothing if not a profit. "Expensive" is not a price, it's a mindset that only thinking makes it so. A Tormek T8 will bring money into your life if you let it. You have made a wise decision. Now all that's left is to send an email to Tormek in Sweden telling that that I influenced you in buying one. ;-)

True, I've proven many times that angle isn't as crucial as many people think. Hundreds of thousands of years of knife sharpening without Tormeks and angle guides can attest to this. G'day Rod. Thanks for stopping in but nah, I'm not a fan, looks like a waste of time for me. I'm talking from ignorance but it appears as if I can get exactly the same job done with the WM-200 in 3 seconds. I only use and need one wheel and don't have time to spend mucking around with that trinket. If you're constantly swapping wheels of different diameters I can see that maybe there might be a luxury use for it and a man can't have too many toys but it's not needed in a professional outfit where time is of the essence and the current tool works perfectly well already.

Fair enough. I find personally that I can set up a knife in half the time of the wm-200 days myself@@iSharpen

the only thing i find scary is the stone turning the opposite directions of the edge. I have used a paper based compound wheel on a bench grinder. I mistakenly orientated it the same way and it gripped the knife and shot it up into the ceiling. very scary. obviously that doesn't apply to the tormek id say.
@iSharpen21 күн бұрын
@@RedFace1 Tormek is supposed to be used edge leading. It only spins at 100 rpm and is very secure. Your bench grinder was spinning 30 times faster. Pushing a knife into that would be a limb severing move. You're right.

@iSharpen18 күн бұрын
Can you explain what you mean by "behind"?
@udowanninger330617 күн бұрын
Some sit or stand behind the machine while sharpening, others in front of it
@iSharpen17 күн бұрын
@@udowanninger3306 Yep. The wheel should (almost) always be grinding into the blade for edge leading grinding style. I've seen people do edge leading standing in front but I prefer to look down on the knife so I stand "behind" the machine. As long as the wheel is grinding into the blade, that's what matters. There are some instances when the wheel should be turning away from the edge though. For example when sharpening all wood turning chisels they're sharpened edge trailing so the wheel is turning away from the edge. As I get older though I wouldn't mind sitting. Might try that one day. These old legs aren't what they used to be.

I don’t find the angle increase you get at the tip by lifting evens out, and I want a consistent angle along the full length of the blade. I follow the Tormek handbook and I rotate the knife instead, with the jig mounted at the sweet spot on the knife. Then the entire edge makes contact with the stone at the same height and the angle is consistent. I find the angle increase by lifting to be extreme, and on some knives the result looks really bad.
@iSharpen20 күн бұрын
Interesting. Tormek suggests lifting in their videos though. On what page do they suggest rotating? I'd like to confirm that they disagree with themselves.
@mh439220 күн бұрын
I think so too. It’s on page 53-56 under the SVM-45 section, mine is printed in 2018. It’s the swedish version however, so your page number may vary. From what I’ve seen, some of Tormeks videos that are 10+ years old suggest rotating, but later they’ve gone all in on lifting. I don’t understand, when you put the jig on correctly, usually in the middle but not always, a rotating motion automatically lets the entire edge make contact with the stone at the same height. Lifting is what complicates things in my opinion. I’ve actually asked them in the comments section on their videos about why they contradict their own handbook, but have not gotten a reply. If you want to, please try rotating to compare the results, but it is important to set the jig correctly. I set the angle first, then put a dot with a marker on the stone as a reference, put the jig where I think is right, and do a rotating motion. I adjust if necessary, and when the entire edge stays just at the dot I know I got it right. Takes about a minute or less.

@ yes, I've seen the method. As for getting a response from them good luck, I think they check their emails once every 6 months.

I love sharpening videos. No matter what you currently do, your knives are handed to customers with a mathematically, scientifically, Concave edge. Does that matter? Does to some folks. A slightly Convex bevel is recognize this better than a slightly concave bevel. Secondly, use a scientific caliber and use trigonometry to measure multiple places on your sharpening job. I'll bet you a dollar every point you measure is a slightly different angle, maybe averaging 14 degrees a side. There are ways to sharpen every knife Convex, and every place on a blade bevel the exact desired angle.

Glad you're enjoying the videos. Technically, mathematically and scientifically you're right because I'm sharpening on a round wheel just as the Japanese and Chinese have been doing for thousands of years. In reality though the curvature is so minute, so minuscule and so microscopically tiny as to be actually insignificant let alone visually perceptible in real life. The knives go out satanically sharp, they last a hell of a long time (because of the way I finish), every single customer and client has been so astronomically impressed that they all say they've (actually in real life) never (literally ever) experienced knives this sharp before. My butcher says my knives last so long that he's been using just one of my knives for weeks and weeks on end with only a light touch on his steel every few days. This blows his mind because before I rocked up he'd have to spend at least an hour every few weeks sharpening all his knives. Now he doesn't even touch them and prefers to use the one or two that I sharpened for him for literally all the tasks. A large butcher's knife (for cutting large cuts and steaks) and his boning knife which is still so freaking sharp that he also uses it for fine filleting. So maybe, just maybe, a microscopically concave edge means nothing or is in actual fact and real life a good thing. I suspect that the way I finish them is what makes the difference but yes, technically in the strictest sense you're right. But it doesn't matter at all in the real world. We both win.

Baz, what brand are those soft backed diamond sharpening plates? Have searched both eBay and Amazon but no success. Maybe not descriptive enough, though the English us a hoot! Thanks.

They're on eBay, they're all made in China. Search for "diamond sharpening plates" and get the ones with the thin black foam backing. They seem to last longer.
