I highly recommend using a milk jug thermometer. I thought I was heating the milk to the correct temperature (between 60 - 70 degrees Celsius) by heating the jug until it was too hot to touch. It wasn’t until I purchased a milk jug thermometer that I realised that I wasn’t heating the milk enough. Too hot to touch for me was about 50 degrees Celsius - well under the desired temperature. Take the guess work out and invest in a milk jug thermometer. They are inexpensive and easily accessible.

Had the BB for a year now and haven't been able to make milk consistently until after watching this video. 1. @2:32 Air introduction is important. Too much air and the foam becomes fluffy and not runny. The tip to introduce air until the far side of the pitcher becomes warm is a great starting point. 2. @3:03 Creating a high vortex is also important. Faster vortex creates more homogenized distribution of the microfoam. 3. @5:27 I've seen a ton of videos and cannot believe they don't mention to pour *VERY* close (if not onto) the crema of the espresso. "Milk will not sit on top if you do not get close enough". @6:11 We need these shots of not pouring correctly.

This has been so informative with using the BBE. After many other searches (which are also quite informative like Chris Baca) but no one addresses the technique pertaining to a home machine, specifically the Breville Barista Express to the point of a step-by-step tutorial they way you have. I especially appreciate your clean and precise video method. I've become picky about which videos I can handle and cannot, certain sounds being a huge deterrent (I remember one of your past videos with sound being so echoed that I couldn't watch it), foreground & background distractions (people walking by in the background or too much kitchen clutter), and you have nailed it in the sense of keeping a key amount of simplicity to convey your topic all the way to the end. Thank you so very much, I will stay tuned.

This practice concoction was the perfect tool for my wife to understand texturing milk. She had it down in about an hours worth of practice, plus NO WASTED MILK👌🏼👌🏼👌🏼!!! I am disabled(no use of hands) and needed her to get it, because I like cappuccinos, a lot lol.

Great vid - just got mine. My 2 takeaways are: Don't turn on steam before putting into milk 😅. And resist the urge to lower the jug when aerating it as from what I can see the surface of the unaerated milk remains more or less at the level it started despite the volume growing.

Fantastic, ive had one for about 2 years, great home machine. I would suggest getting a good scale and weighing your beans before placing ito the grinder. I use approx 15ish grams and you'll need to play around with your grind settings to get a 1:2 ratio of beans to coffee in 25ish seconds. Play around with it and you'll get great results and have some fantastic coffees. Enjoy.

As someone who had to learn all this by myself on the Infuser model, he is correct. Save yourself the time in trying other ways on these kind of Breville machines, this is basically the only way I've been able to get good milk.

Can you expand on the “vortex” aspect-what is that and how far should I plunge the steam wand into the milk after aeration?

The "vortex" simply refers to getting a nice strong whirlpool as demonstrated in the video clips. This is a critical part of the process, because it is when the air is integrated and very evenly mixed into the milk. After aeration, move the wand deeper JUST until you hear the air introduction stop. This will only be 0.5-1cm deeper than you were holding it while introducing air.

I'm no barista, but I like or think it's important to watch the actual volume of the milk rise to the desired level too. Just how much foam do you want and if it for example rises very fast to a high volume, you likely made foam with big bubbles.

Start with your tutorials again on the Rocket Appartamento! It is a very popular machine as well, and I feel like a lot of people do the same progression (as I am), graduating from the BE to the RA. I missed out on a NIche though so it'll be a Mignon Specialita for me. Great machine, love the coffee I make from it...but with the money you pay, it could have had a better milk frother. I feel it's not strong like other machines around the same price value.

The milk should always start off cold, to allow you enough time to add and mix in the air before it becomes too hot Most milk alternatives can also be used, although some will be easier to texture than others. I generally have had the most success with soy and almond milks

@@burger85 Hi, I did best with barista style plant milks. This is because the manufacturer adds plant oil to the milk so you can create the texture. Soy and almond work as well but I found the the foam is more like whipped egg whites, I guess because of the higher protein content of these plants.

I’m gonna try your tips. I love my Solis (same machine as yours) but the milk foaming is so hard to do. So use pumping milk foamers 🙈 I’m gonna try with water and soap now.

i have a Solis Grind and infuse pro, which is the same machine, and I'm having trouble getting the right milk consistency. With professional machines I have no trouble with this at all. I will try your practice tips or will be buying a electrical milk foamer because I'm getting a tad frustrated XD

Hi Johan, I dont have an exact measurement of temperature for you. When you start to feel anything warmer than room temperature on the far side of the outside of the mug, you can start vortex step. This is not an exact science, you will still need to practise to learn exactly how much air to introduce

I tried your soap and water method 3 times just now, but I’m getting really confused on the aerating process before I even try the vortex…the sound sounds pretty close, but the bubbles are bigger than they should be and take a long time to cover the top layer of the pitcher. When I pour it at the end, it’s just regular water with some bubbles pouring out. :/

If your bubbles are too big, your tip is too far above the surface of the water. Start with the tip submerged, and only barely bring it above the surface

A flat white will typically contain even less foam than a latte, with even finer microfoam. You will want to introduce less air at the beginning than the method shown here, and spend more time mixing it in (incorporating). Take a look at the steaming video we just posted!
