Easy Yummy homemade vegetable pasta recipe:
Simple and yummy vegetarian pasta recipe:
Ingredients:
1 cup pasta (penne, fusilli, or any shape you prefer).
2 tablespoons of oil.
3 cloves of garlic, finely chopped or grated.
Piece of Ginger, finely chopped or grated.
1 onion, finely chopped.
3 green chilies, finely chopped.
Carrot, finely chopped.
Beans, finely chopped.
Capsicum, finely chopped.
1 tomato, finely chopped.
salt to taste.
1/2 tablespoon Red chilli powder.
2 tablespoons pasta sauce or 1 tablespoon pasta masala.
1/2 tablespoon soya sauce.
Salt and Red chilli powder to taste
Fresh basil leaves, chopped (for garnish)
Instructions:
Cook Pasta: Cook the pasta according to package instructions until al dente. Drain and set aside.
Sauté Vegetables: In a large pan or skillet, heat olive oil over medium heat. Add minced garlic,ginger,chilli and chopped onion, sauté for 2-3 minutes until softened and fragrant.
Add finely chopped carrot,beans, capsicum to the pan.Cook for about 5-7 minutes until the vegetables are tender-crisp.After that add finely chopped tomatoes,salt to taste,red chilli powder,paste sauce and soya sauce over the vegetables.
Stir well to combine and cook for another 2-3 minutes until the tomatoes are slightly softened.
Combine Pasta and Vegetables: Add the cooked pasta to the pan with the vegetables. Toss everything together gently until the pasta is well coated with the vegetable mixture.
Serve: Remove from heat. Serve the pasta hot, garnished with grated Parmesan cheese (if desired) and chopped fresh basil leaves.
Enjoy your delicious veggie pasta! Adjust seasoning according to your taste and feel free to add more herbs or spices if you like.
