अक्की रोटी
• १" आल्याचे तुकडे
• ५~६ हिरव्या मिरच्या
• १/२ कप खोवलेलं ओलं खोबरं
• कोथिंबीर
• १ १/२ कप तांदळाचं पीठ
• १/२ चमचा जिरं
• बारीक चिरलेला कांदा
• चवीनुसार मीठ
• जरुरीनुसार पाणी
• तेल
टोमॅटो चटणी
• १ चिरलेला कांदा
• ५~६ लसूण पाकळ्या
• ४ चिरलेले टोमॅटो
• १/२ चमचा जिरं
• २ मोठे चमचे तेल
• १ चमचा मोहरी
• १ चमचा जिरं
• चिमूटभर हिंग
• कढीपत्ता
• १ चमचा चणाडाळ
• २~३ सुक्या लाल मिरच्या
• १ चमचा लाल तिखट
• चवीनुसार गूळ
• चवीनुसार मीठ
• बारीक चिरलेली कोथिंबीर

Ingredients:
Akki Roti
• 1” chopped Ginger
• 5~6 Green chilies
• 1/2 cup grated fresh Coconut
• Coriander leaves
• 1 1/2 cup Rice flour
• 1 tsp Cumin seeds
• Finely chopped Onion
• Salt to taste
• Water as needed
• Oil
Tomato Chutney
• 1 chopped Onion
• 5~6 Garlic cloves
• 4 chopped Tomatoes
• 1/2 tsp Cumin seeds
• 2 tbsp Oil
• 1 tsp Mustard seeds
• 1 tsp Cumin seeds
• A pinch of Hing
• Curry leaves
• 1 tsp Chana dal
• 2~3 dry Red chilies
• 1 tsp Red chili powder
• Gudh to taste
• Salt to taste
• Finely chopped Coriander leaves
Method:
Akki Roti
• Blend ginger and green chilies into paste in mixer and fresh coconut and coriander leaves.
• Blend it together into coarse paste and masala for akki roti is ready.
• Mix rice flour, blended masala, cumin seeds, onion and salt well together and add a little water at
a time to knead soft dough.
• Cover and rest the dough for about 10 minutes.
• Spread a sheet of butter paper and sprinkle water on it.
• You can use Aluminium foil or banana leaf in place of butter paper.
• Take a small portion form the dough and make it smooth and even.
• Place the dough on butter paper and cover it with a polythene sheet.
• Spread the dough carefully into thin roti with hand.
• Heat up a pan on medium heat and spread oil on it.
• Remove the polythene sheet transfer the akki roti on it.
• After a few seconds, remove the butter paper and roast the roti well.
• Cover and cook the akki roti well for about 4-5 minutes.
• Remove the lid and flip the roti over.
• When other side is also roasted well, take the roti off on a wire rack. Akki roti is ready.
• Serve it with tomato chutney.
• It can be a good option for lunch box.
• You can keep the dough ready night before and make roti next morning.
Tomato Chutney
• Blend onion, garlic, tomato and cumin seeds well together into fine paste in mixer.
• Heat up oil in a pan and add mustard seeds.
• When mustard seeds pop up, add cumin seeds, hing, curry leaves, chana dal and dry red chilies
and fry together for about a minute.
• When the dal begins to change the color, turn the gas to low heat and add the blended paste.
• Mix well and cook it well for about 10-12 minutes until all the water is removed.
• Add red chili powder, gudh and salt and mix well.
• Cook it well for about 2-5 minutes and add coriander leaves.
• Mix well and tomato chutney is ready.
