Hi Chef, as requested my feedback, Made the Nadan Kozhi Cury and the Chicken Biryani over the weekend. Here is my feed back. The Kozhi curry was a KILLER, the Colour, the Heat level, texture of the meat and the consistency of the Gravy, Nailed it! 🙏🙏🙏Next time I want to try it with free range farm raised chicken (which would take more time to cook but!!!), could not get it last weekend..and I am gonna use your proportions and cook it in a manchatti! next time. If you have any advise as to water quantities, cooking times etc. in a manchatti Vs a heavy bottom pot, kindly post back if and whenever you get a moment. With the Biryani. your methodology was very similar to how my Mum used to make Biryani at home, so it was rather easy to comprehend in my head what your final dish should be, even before starting cooking. That being said, my biryani from the weekend turned out a little less dry to my personal preference and as I envisaged the dish aught to be. Chef, the mistake that I made was, I failed to factor in the liquid that was released from the chicken while cooking and added the full cup of water as the recipe called for, it became a bit too watery (Oh Well, just goes prove, I am, only a human after all!...) That being said, Ladies and Gentlemen of the jury, the Biryani taste is just Wicked!!!( humbly if I may 👏👏👏👏...) Chef, I got your spice mix and the other proportions correct. The excess-liquid is an easy fix for next time.. 👍I have got this Chef, 🙏. To all your Subscribers who have not tried this recipe, this is a simple to follow, easy 1-2-3 step- by step structured process. If it is your first time, my advise, please do not try and improvise, (Guilty as Charged!!!) . This will become your Go-To comfort food ( If Njaan Can Do It, So can You..Aiyoo, Che, Che, Che.. Ichira cheap...soorry could not resist!!! 😉 Next exciting project for me is your Ambur Biryani Chef, loved it when I was working at Vellore, used to frequent, Star in Ambur with the team.....Never thought I would venture into these, once upon a time, complicated and exotic, but yet, home comfort food,...LOLLLL Thanx to you, I am going to try it at home! Always Be Blessed and more than that, Always Be A Blessing into many more homes Chef!🙏
