I love Nadiya, she's wonderful but I suspect I've been cooking a lot longer than she has and boiling those ribs is all sorts of wrong. It tightens the meat and shrinks it - and there's not a lot of meat on those rib bones to begin with. It's just unnecessary. Just brush the ribs with olive oil, cook the them in the oven for about 20 mins, then take out and brush with the sticky glaze and bake in the oven again for a further 10-15 mins, basting a few times as you go.
@rizwan1013 жыл бұрын
This kind of makes sense - I'm not sure why you need to boil the ribs.
@otherworld67152 жыл бұрын
So I'm about to make lamb ribs for the first time which is why im here. I usually cook goat not lamb so I'm not too familiar with how lamb acts, but I would assume the boiling is to make the meat more tender before putting it in the oven? I think she boiled for 35 mins before putting it in the oven for a total of about 25 mins. Are you saying that just having it in the oven for about that much time will make the meat just as soft and tender? For goat meat i always boil first
@halalmuslimah9076 Жыл бұрын
How do you baste as you go while they’re in the oven I wanna learn to make this properly
@seemaab9 ай бұрын
Boiling tenderisers the meat, same with steaming and pressure cooking
@hasbo6 ай бұрын
With lamb you either cook fast with direct heat so that the meat is only just cooked (even rare), OR cook slowly for a longer time until the collagen starts to break down. Boiling the ribs helps to achieve this while keeping the meat moist. One could, alternatively, roast them in the oven for 1.5 - 2 hours or more if covered.

3:10 What does she mean by basting half way through? And with what?!
@polljones89213 жыл бұрын
She means if they're in the oven for 10-15 minutes, then take them out at about 5-7 minutes (half way through the cooking time) and re-coat them with the mix she used (the sticky glaze she originally coated them in). Basting just means brushing over with whatever mix you're cooking the dish in - in this instance it's the sticky glaze she made. Usually you'd turn them over too, to get them crisp on both sides.

The term of BBQ has been expanded to any dish that has something dead slathered in a surgery sauce, or anything dead that is grilled (see Korean BBQ, Japanese Yakatore, etc). But I agree the verb BBQing probably only includes pit cooking, smoking, slow cooking on grill.

1- You could've added some miropoix with the ribs and used the stock to cook some rice, bulgur, couscous or a soup. 2- I am assuming you using lamb ribs instead of pork because of belief reason, that's good, but you forgot the balsamic vinegar has got alcohol. It looks nice though.
