I made this dish three days ago and you are so right, the beets in the sauce was phenomenal and the fennel in the meat balls brought me back to my Grandma’s Sunday after church dinner table. I am of Italian roots and have cooked this dish a hundreds if not a thousand times and I just love this so much. Since I had to roast some garlic I decided to roast the beets as well for the sake of economy. Thank you for sharing this very smart way of sweetening the sauce, I never have to add sugar again and sugar wasn’t a very good solution either, but this is!!! You are one smart chef!

I am 100000% Sicilian and we live and die with pasta and sauce. I must say i totally approve of this. Wow. And the two things you said which sealed the deal for me was to heavy salt the water, people never add enough salt to water. They need to understand this is the only time u get to flavor the pasta. And you cooked it to Al dente. Again another amazing video.

Oh! Lord have mercy! This 2021 we are in for an amazing time in Nanaaba's Kitchen, and guess what Sis, we are READY! This Spaghetti and meatballs are to live for. I have no idea how I got here so late but thank God I made it. I have never seen meatballs made this way, so unique, different, full of flavor and yes, it turned out nice and moist. The beets in the sauce was a first too and how thoughtful that was. It didn't just add sweetness, it added that rich dark color to it, giving the sauce that beautiful color. The end result....AMAZING! Absolutely AMAZING! You deserve a standing ovation! If this is what 2021 holds for us in Nanaaba's Kitchen, we are going places together! God bless you Sis! ❤

I was always told if you add salt to boiling water while cooking the sauce dries out if you throw it all together but I use Olive oil instead it keeps the pasta from drying out
