Potato Leaves Stew

INGREDIENTS:
* 2 lbs boneless beef shank cubed
* Optional beef tripe 1/2 lbs
* Optional parboiled beef tendon 1/2 lbs
* 1/2 pound smoked fish
* 1 tbsp salt or to taste
* 1 tsp crushed black pepper
* 1/2 tbsp ginger paste
* 1/2 tbsp garlic paste
* 1 minced scotch bonnet chili
* 1 large chopped onion
* 1 tbsp all purpose seasoning or 1 bouillon cube

Liberians called this palm oil or red oil potatoe leaves soup. We cook potato leaves three ways: fried, boiled and steamed over a pot of plain rice(potato leaves dried rice). Ps: the sweet potato leaves have health benefits and nutritional value.

Wow...never heard of sweet potato leaves. In Trinidad and Tobago, we use dasheen leaves (taro leaves) to make callalloo .. which has a soupy consistency. But this one is new to me. The leaves look, somewhat, like kale.
