INGREDIENTS:
2 small piece Ginger (about 1/2 tbsp when crushed)
Chili (amount as tolerated)
3 cloves Garlic
3-4 small Tomatoes
3 small Garden eggs/eggplant/aubergine (about 200 g)
1/2 large onion
4 cups Water to boil above ingredients
Protein: 1/2 pound bone in beef, 1/4 pound cured lamb AKA Toolo beef. Season with generous amount of salt to start, other half of onion chopped, 2 grains of selim (optional, or substitute with 1/4 tsp crushed black pepper) cook on medium high, while stirring periodically, for 10 mins.
Other protein- 1/4 pound smoked fish, 4 small African snails, about 60 g salted fish AKA supaku
1 heaping tbsp tomato paste
1/4 tsp crushed black pepper
1/4 tsp vegetable bouillon (may substitute with chicken or beef bouillon)
Additional 1-1/2 L water
1 Aidan fruit AKA prekese
Garnish with whole okro, chili, garden eggs (must cook with soup till fork tender)
** total cook time 1 hour **
